A little over a year ago, I predictâ€" ed that the red Santa Carolina Cabernet Sauvignon from Chile would be one of the hottest selling wines during 1993. The quality was just incredible especially considerâ€" ing the low price then of about eight dollars. Today, the Santa Carolina is truly a superstar, outselling most others in its class. It also has become my own red housewine and still sells for only $8.10, but that‘s red wines. The choice in white is not as easy, at least not until now. Santa Carolina wine a true superstar This Cabernet Sauvicnon was my choice for the best red wine buy in 1993 in my column. It could be quite possible that a newly arrived white wine from the same winery in Chile will be capturing this coveted distinction for 1994. In fact, I will go as far as predicting that this wine will at least outsell any other white wine that comes from this part of the world. The 1993 Sauvignon Blanc from Santa Carolina has just arrived in our stores and I tasted my first botâ€" tle here in Canada since tasting botâ€" tle samples of it back at the winery in Chile this past spring. What I would like to mention is the fact that a vintage of 1993 is actually not like ours from 1993; the seasons in South America are reversed and the wine is of a 1992 vintage as if it would have been grown here or in Europe. EBERSPAECHER When Santa Carolina was foundâ€" ed back in 1875, the winemakers then selected the best possible vineâ€" yard areas around the Maipo Valley. This region, including the San Fernando and the Casablanca area are now considered by many as the best regions to grow premium grapes in Chile. The soil and climatâ€" ic conditions have made it possible to grow such great French varieties as Cabernet Sauvignon, Sauvignon Blanc, and Chardonnay, at a quality level that is unheard of in many of the world‘s most famous wine As far as Chile is concerned, this is only the beginning. I have tasted Merlot over there that could comâ€" pete with the best, and I have had a dry Alsatianâ€"style Gewuerztraminer that was just incredible, better than just about anything I have ever tastâ€" ed. As a matter of fact, along with some travel companions, I ordered a tenâ€"yearâ€"old Chilean Cabernet Sauvignon for about $20.00 in a restaurant in Santiago that was in our opinion, perhaps, one of the best, if not the best red wine we have ever tasted. If they have such incredible wines at $20.00 in restauâ€" rants, what else can they come up with? The wine comes from the Santa Rosa Vineyards in the Maipo Valley and is, of course, 100% Sauvignon Blanc. I have been told that the wine is fermented for 17 days at controlled cold temperatures and then immediately stored in stainless steel tanks to permit the retention of the fruit in the wine. Admission to the allâ€"ages concert, which also includes an appearance by the Torontoâ€"based band, The Rustic Gomers, is $5. crowing reci0ns. The Celtic rock band, Cucculann‘s Lament, is making another appearance at The Ozone, Lakeshore road East in downtown Oakville, Tuesday, Dec. 21st. The band asks that patrons bring nonâ€"perishable food items to be disâ€" tributed to needy families this Christmas. But let‘s return to the Sauvignon Blanc from Santa Carolina. Although I have tasted a number of similar wines from Chile, I feel that this, perhaps, is the best one yet. The result is a strawâ€"colored white wine with a very intense and elegant floral bouquet and has a taste that is very soft. In taste, this wine is dry and fresh, with a pleasâ€" ant acidityâ€"fruit balance that would lend itself as a perfect match for just about any type of dishes. I like to drink the Santa Carolina Sauvignon Blanc on its own and considering the price of only $7.25, it could very easily become one of the best selling wines of 1994. Let‘s take a look at it next year at this time and see if I was richt acain.
