A major component of these pavilions will be the food offered that gives visitors a glimpse of the culinary component of each country. The following is a look at some of the offerings at the Canadian Pavilion which will be located at Town Hall on Trafalgar Road. Throughout the province of Quebec, residents crunch home in the snow after midnight mass on Christmas Eve to the feast called reveillon. Inevitably, waiting for them among the spread of traditional delica cies on the table will be the rich steam ing meat pie heavy with the spicy scene of savory and cloves. It's called Tourtiere. And once you've tasted it in that setting, you'll never forget it. The Canadian Pavilion will be serving tourtiere during the Carousel of Nations to bring visitors a taste of Quebec winter. The pavilion will also serve such Canadian delicacies as lobster rolls from Atlantic Canada, Bison Burgers and Lick's H om eburgers representing Manitoba and Alberta and smoked salmon wraps from British Columbia. But the Tourtiere of Quebec holds a special place in Canadian cuisine because it is a dish that has evolved with the country and survived, despite its origins. As Cynthia Wine, now the restaurant critic for the Toronto Star, explains in her 1985 cookery book, Across The 'fable, An Indulgent Look At Food In Canada (Prentice Hall), the origi nal tourtiere was made with tiny game birds called Tourtes that lived near the Gulf of S t Lawrence. They are now extinct But the pie survives by being made with either pork or beef.
