I love a good salad, and the creativity and versatil- ity of different salads is fun and inspiring to me. Salads can be made from a wide variety of in- gredients, textures and col- ours. They can be adapted and changed easily to suit your needs. This is a delicious salad made with spiralized green zucchini and yellow squash as its base. It is col- ourful, full of crunch and flavour! If you are not a fan of a peanut dressing or you have a nut allergy, I recom- mend using a traditional balsamic dressing instead. We love the peanut dress- ing and the crunch of the peanuts. SPIRALIZED ZUCCHINI SALAD WITH PEANUT DRESSING SALAD INGREDIENTS 2 medium zucchini 2 medium yellow squash 1 red pepper, thinly sliced 1 cup snow peas, thinly sliced 2 to 3 green onions, thin- ly sliced DRESSING INGREDIENTS 1/2 cup chunky peanut butter 1/4 cup vinegar 2 tbsp honey 1 tsp soy sauce Pinch of chilli powder Salt and pepper to taste Water to thin out the dressing if desired INSTRUCTIONS 1. Put your zucchini and squash through the small- est setting of your spiraliz- er. 2. Combine all salad in- gredients. 3. Combine dressing in- gredients until you have reached desired consisten- cy. 4. Pour dressing over salad and enjoy!
