Nutri-Thrift Menu Southern Beef Roll - Creamy Mashed Potatoes Scalloped Potatoes and Cabbage Carrot and Raisin Salad Spanish Cream Molasses Cookies and Beverage Southern Beef Roll 2 thbsps. beef dripping, 1 pound minced chuck or beef steak, 2 tbsps, flour, 2 thsps. minced onion, 2 tbsps. chili sauce, 11 cups water, 1 tsp, salt, % tsp. chili pow- der, % tsp. pepper. Brown meat, flour and onions in melted dripping. Add chili sauce and water, simmer 10 min- utes. Add seasonings and cool partially, Prepare biscuit dough: Sift 2 cups bread flour, 3 tsps. baking powder, % tsp. salt info a mix- ing bowl. Measure 4 tbsps. of shortening and add to dry ingre- dients, Blend together until tixure is mealy, add % cup of milk and stir only until soft dough is formed. Turn out on a floured board and pat into rec- tangle about 1-3 in. thick. Spread with beef filling and roll like a jelly roll, Place on baking: sheet. Bake 30 minutes in electric oven at 350 degrees. Add gelatine, remove from electric element and add % tsp. salt, Chill in electric refrigerator until mixture begins to thicken. Fold in 2 egg whites beaten stiff but not dry. Pour into mould rinsed with cold water, Chill until firm, unmould and serve with top milk, Serves 6. Molasses Cookies % cup shortening, 1-2 cup brown sugar, % cup molas- ses, 1 egg, 1-2 cup sour cream, 11; tsps. soda, 1-2 tsp, salt, 1 tsp. ginger, 1-2 tsp. cinnamon, flour. Cream shortening and sugar stirred, Add the salt and spices beaten egg, and the sour cream into which the soda has been stirred, Add he salt and spices and enough flour to make a very soft dough.
