Quick and Easy Sauerkraut Cabbage sliced thinly (2 Ib. per quart volume) 1 1/2 salt per ib. {do not reduce) 1 teaspoon spices per |b. (you may use any combina- tion of caraway seed, celery seed, dill seed, mustard seed, juniper berries) Place cabbage and sait in a crock or plastic container (do not use metal) Pound with potato masher or wooden mallet until juice covers cabbage. Add spices. Cover with clean cloth, piace piate on top and put a weight on this to keep the cabbage under juice. Refrigerate. Change cloth and skim surface whenever needed during fermentation process which takes 4 to 6 weeks. A survey completed early this vear resulted in a posi- tive interest in this project which has prompted the Cham- oer to proceed. Currently, the Chamber is locking for a label design that suits the County's character. First prize will be, one night's accommodation includ- ing dinner a Isaiah Tubbs Resort, or for the student, one free bowling party at Picton Lanes. Contestants may forward their County label concept, which is to be reproducible as a stick on label for pack- aging and promotional material of businesses, to the Chamber Office at 116 Main Street, Picton.
