Newm method for canning tomatoes Hi, I'm Jason Earl Taylor Grandparents are Mr. and and 1 was born March 28, Mrs. E. Taylor, Orono, and 1977. My mom and dad are Bob- and Colleen Taylor. Mrs. L. Townson, of Oshawa. NDPu ca ndidate-ý challeocnge^s Lawrence On April 13, Allen Law- rence, MP, in a speech given in Oshawa, made an attempt to allienate the worker from hîs close association with the New Democratic Party. He imphied that the -worker and the New Demnocratic Party were working at cross pur- poses. Perhaps he should take a closer ook at the philoso- phies of the trade union movement and the NUF. The basic objective of unionism is to protect the worker's inter- est and to give him a voice in the economic system. Simil- -arly, the New Democratic Party philosophy is to protect the citizenry ini the political arena and to guarantee each person his rightful place in the economy. Perhaps Mr. Lawrence would better spend his time in promoting social justice than in alienatîng the Canadian worker fromn bis natural niche in the political pýrocess. Another issue whieh he raised was the reaction of the New Demtocratic Party to the Anti-Inflation Board. He fail- ed to mention that during the last federal election the Tories ran on a platformi of controls. Both the Ne w Demo- cratic party and the trade union movement are striving for a heaithy economy. Under a systemn of equal burden the NDP and the Canadian work- er would support a programn- me of restraint. However, presently only wages are controlled and prices have been left floating like the Canadian dollar, except that immmmmmmmmmmmM il Clarke High School Il HoldsI Ill oe Education Week i House * Thursday, April 2th 7* 00Op. m. - 9.:00p. Food special- ists at the Ontario Food Counceil, Ministry of Agricul- ture and Food recommend that you use a new method for canning ail tomato varieties in preference to the method used for cannîng other fruits. Here's why! Tomatoes have been considered high in acid. However, in recent years, it bas been f ound that the acid level of some tomato varýieties may not be suffi- ciently high to assuré safe eating if they are canned like other fruit. Using the new method, the tomnatoes are, packed raw, citrie acid is added to the jar to boost the acid level, and the jars are processed in a hot-water bath for a certain time. There are reasons for making the change. Using the prices' float upward, neyer down. Tt only stands to reason that the worker and his political arm would oppose a programme which puts res- traint on the worker but not on the corporation. Mr. Lawrence said that with a New Demnocratic government taxes and prices would go up. 1 say to Mr. Lawrence that the reason- taxes and prices are so high now is the Liberals in Ottawa and the Conservatives in Ontario have so mismanaged the economy in the past and, the present, that we, the Canadian taxpayers, are pay- ing for this blunder with our hard earned dollars. At a timne when our country is in dire need of positive action, politicians cannot af- ford to waste valuable tYime nit-picking. A more. positive approach to our problemns will be required during an election campaign. It is not a timne for rehetoric but for sound policy discussion. The new president of the CLC, Dennis McDermott, has stated that the objective of the CLC is to pliticize the worker and strengthen the alliance between the trade raw-pack method for home-. canning tomnatoes in prefer- ence to thehot-pack method avoids an overly solid pack which would prevent proper heat penetration during pro- cessing. The addition of citric acîd increases the acid of tomn- atoes to an acceptable level for hot-water bath proces- sing. Citric acid comnes in crystalline form, is inexpen- sive, and available from most drugstores. (It is not the same as ascorbic acid). For. each quart jar of tomatoes, dissolve 1, tea- spoon of citric acid in 1 tablespoon of boiiing water. For each pmnt jar, reduce the citric acid to ',/4 teaspoon and dissolve in 1 tablespoon of boiling water. To assure a good distribution of citric acid throughout the jar, haîf-filI the canning jars wîth the prepared tomatoes, add the unin movement and the New 'Demnocratic Party. With the worker becoming politically active, there could be a whole new future for Canada. Mr. Lawrence must realize this and it seemns he is groping for a way to staîl this process. With an active public, aware of the' political and economnic situation, the pow- ers that are will have to be more responsive and respon- sible in their position. The elîte will have to be accounit- able to the public. In thîs new milieu the policies of the old line parties ring hollow and they will tumble down like the walls of Jericho as the trumpet of the worker sounds. Bill Clarke of Newtonville has been informed that Her Majesty the Queen bas been graciously pleased to san- ction his admission into the Order of St. John as fromn February 15th, 1978. An announcemnent of this' honour will ini due course appear in The London Gaz- ette. The honour will be presented by the Governor General at the Faîl Investi- ture in Government House, Ottawa. Shopping plaza Orono meeting At the Planning and Devel- opment committee, meeting for the Town of Newcastle on Monday the committee rec- ommends that the -Cierk be authorized to arrange a public meeting to be held in Orono regarding a rezoning application for a parcel of land in the north-east of Orono to permit a shopping plaza. The application was made by Armstrong Stores Limi;ted on October i7th, 1977 with a proposai for a 61,500 square foot shopping centre in the north-east of Orono,, east of Mill Street to contain a grocery stoe and severai conveniencte stores.
