We bave had no ain wortb mentioning since June 12th. Somne of the Kendal folk went to the Orono United Cburcb on Sunday morning and enjoyed the beautiful organ music played by Mr. David Graýy. We enjoyed meeting tbe visitors from places as far away as Florida. Pork, barbecued over a fire, bas an exciting, unique flavor that just can't be beat. Count on it tbis summer for somne of the best cook-outs you've ever had. The price is right and not soaring out of reacb. Pork requires longer cooking than other mneats so it is sometimes overlooked for barbecuing. Combine lîquid drained from pineapple (reserve slices) with the remnaining ingredients and pour over the roast. Close plastic bags around roast and secure with wire twists. (Marinade will be ail around roast in the bags.) Refrigerate several hours. Prepare the barbecue for using rotisserie. Remove roast front bag and reserve marinade. Insert spit through the centre of the roast and balance; secure in place. lnsert a xneat ther- mometer at a slight angle so the tip is in the centre of the roast but not resting in fat or on bone or on the rotisserie rod. Set roast over drip pan. A little water in pan prevents flare-ups. Roast slowly. Brush on reserved marinade occasionally after the first hour of cooking, using remaining marinade, most frequently toward the end of the second hour. The roast should be done and register an interna', temperature of 170 degrees F to 175 degrees F in about 2-1/4 hours. Warmi pineapple slices on grill, brushing each side with marinade and serve hot as a condiment for the roast pork. Makes 8 servings. Wine-Basted Pork Chops 6 pork shoulder blade (butt) oradrm chops, 3/4 inch thick 1 cup white wine 1 cup bottled barbecue sauce J teaspoon sait Place chops in a flat glass dish. Combine remaining ingredients for marinade and pour over chops. Refrigerate for at least 4 hours. Place chops on ouled grill and barbecue at low to moderate temperature, brushing wýith marinade and turning oc- casionally', for 35 to 45 minutes or until well done. Mlakes 6 servings.
