12-Orono Weekly Times, Wedncsday, February 28, 1990 Coconut Cream Pie 1 baked 9 inch pie shel 1/ tsp. sait 1/ cup granuiated sugar 8 tbsp. flour or 4 tbsp. corn starch 2 cups milk 2 egg yolks 1 tbsp. butter 1 tsp. vanilia '/ cup coconut Combine 1/ cup sugar, flour and sait in top of double boiler. Str in miik gradualiy. Cook stir- ring over boiiing water until thick and smooth. Cover and cook 10 minutes longer - stirring occasionaiiy. Beat egg yolks sightiy with 1/4 cup sugar. Add a littie of hot mixture to eggs so it doesn't curdie, then add egg mixture to the mixture in double boiler and cook until it mounds when dropped from a spoon. Remove from hea t. Add butter and vanilia, let cool. Add 1/ cup coconut. Pour into baked pie sheli. Cover with meringue. Meringue 2 egg wbites, V2 tsp. vanilia ¼11 tsp. c ream of tartar ¼/ cup fine fruit sugar Sprinkie a littie coconut on meringue. Brown meringue in a 3500 over -12-15 min. Melting Moments 1/ cup cornstarcb 1/ cup icing sugar 1 cup ail purpose flour 1/ cup butter maraschino cherries Mix dry ingredients, add but- ter. Mix until smooth. Roll into bails on ungreased cookie sheet, flatten. Cut maraschino cherries in haif, place on top'. Bake at 300' for 20-25 minutes. Makes 3 dozen.
