Now it's the self-styled Peanuit Capital of Canada. That's because Ernie Racz, a pioneer peanut fariner in Canada, operates the Kernai Peanut plant on the outskirts of the village, and farmns over 120 acres of Valencia peanuts. Originally, Erie's father had a very profitable tobacco farrn on the site, but by the time Ernie was ready to take over, the market for the tobacco had dwindled. Ernie and his wife, Nancy, wanted to save the farm at any cost. They knew that Jin Picard who farmed a few miles down the road hiad co nverted to peanuts, and they knew the sandy loama and climactic, conditions were right. They also knew it was a gamble. They needed special equipment since harvesters used in the States weren't suitable for Ontario. They started from scratch, built a giant harvester and invested in processing equipinent te sheil, sort and so on, as well as make peanut butter. They were packaging, distribution and promnotional hurdles that they managed te muddle through. Ernie began te realize, as he puts it, "You have to add value te your product to survive."~ The answer was variety, and they began to make almond butter, cashew butter and sunflower butter along with their regular peanut butter. They brought in a partner to distribute the new Uine and before long the products were going to health food stores across the country.
