They are in need of a strong volunteer or group of volun- teers to act as Campaign Chair for the Orono area. A Campaign Chair is re- sponsible for the recruit- ment of Captains and can- vassers. There are already some canvassers in place. The Chair will distribute kits to the canvassers and col- lect donations. In March, the Chair will compile ail the data from Orono. The Volunteer Co-ordinator and Area Co-ordinator are avail- able to you for support. A Captain's duties consist of dropping off kits to can- vassers in January and picktng them up in March. There is also some banking involved. A canvasser will donate an hour of their time in February to canvass ap- proximately 25 houses on their street or an adjacent street. If you are interested in getting involved in the february Door to Door Campaign in any capacity, please contact the Durham East office at (905) 571- 1582. Children are drawn to its bright colour and sweet taste at an early age and the relationship often continues into adulthood. The canrot is associated with healthy eyes, but its impact on health goes well beyond the eyes. The canrot provides a good supply of the anti-oxident nutrients. 0f these, it is par- ticularly well known as an excellent source of beta- carotene, which the body con- verts to vitamin A as needed. The canrot also contains min- erals, fiber, water and is very low in fat. The nutrients in the carrot help feed the epithelial celîs., These celîs are like your "inside skin" and lîne the nasal passages and lungs, the> digestive sys- tem, parts of the reproductive system, and the eyes. Like the "outside skin" these celîs work hard to protect the body from invaders. Canrots are a welcome addition to any diet, but are especially beneficial to people who have eye, lung or digestive problems. They also benefit those who chal- lenge these parts of their body, such as smokers, house cleaners and others who are frequently exposed to air pollution, drivers, com- puter users', t watchers and others who put signîficant strain on their eyes; junk food addicts, drinkers of alcohol and others who make their digestive system work, over- time. If the digestive system has been pushed too hard and is responding with diar- rhea, the nutrients in canrots can help restore balance. In this case carrot juice or mashed carrots would pro- vide the most benefit. When choosing carrots look for ones that are firm, bright orange in colour'and have a smooth skn. Limp carrots or carrots that are black near the top are not fresh. If the carrots were bought wth greens attached, cut off the greens before stor- ing to avoid loss of moisture. Carrots keep quite well in a perforated plastic bag in the crisper of your refrigerator. Don't store them with apples or pears as these fruits give off gases. that will cause the canrot to rot. Carrots do carry pesti- cides, but exposure can be reduced by peeling the canrot and cutting off at least 1/4 inch of the top, then wash- ing. If you are juicing car- rots, or eating them on a daily basis, it is a good idea to choose those that are organ- ically grown. Fortunately, sources are fairly easy to find as many organic growers include canrots in their crop. Encourage your local grower to carry organîc canrots. Most grocers will respond positive- ly to carrying any product they know they can seli. Canrots are wonderful raw and, unlike many vegetables, continue to keep the majority of their nutrients when cooked lightly. The best method is steaming, however any process that allows the carrot to heat through and soften slightly is acceptable. Cut the carrot into small pieces or long strips when feeding children or others who may choke on the coin shapes. Finely chopped car- rots mixed with raisins pro- vides an attractive and nutri- tious snack, or a colourful addition t0 a meal. Like pota- toes and onions, canrots are here to help northerners sur- vive through the winter. Try mixing mashed potatoes with fînely chopped canrots and onions for a tasty combina- tion.
