Rich, and flavourful, Durham Region's tomatoes are ripe and ready to be picked. The bountiful tomato harvest begins in August and continues well into September. A ripe field tomato bas a particular feel in the palm of your hand. It should be firm, though not too hard, and have a slightly supple quality to its surface; it should feel heavy for ts size. Avoid toma- toes with any sign of mould, or bruises. A crack at the stem end is common, but it will not affect the taste. Store tomatoes at room temperature away from direct sunlight to prevent uneven ripening. Do not refrigerate tomatoes unless they are extremely overripe, or if the weather is very warm. The best place in these situations is in the butter compartmnent of the refrigerator. Your refrig- erator is, the worst place to keep underripe tomatoes because the cold, will arrest the ripening process and tomatoes will remain under- ripe. Also, the cold will kil the flavour of the tomnato. If it is necessary to place tomatoes in the refrigerator, allow them to come to roomn temperature before serving for the fullest flavour. There are two methûids of ripening underripe tomatoes. The first option is place toma- toes in a brown paper bag with fruit such as apples and pears. The fruit gives off ethy- lene gas which speeds Up the ripening process. The second option is to simply leave tomatoes on your countertop, but again, not' in direct sun- light.
