If you would like to bring a little culture into your life, AFS Interculture Canada has just the program for you: host a foreign student and add an international flavour to your family's everyday life. AFS is an international non-profit organization dedicated to global understanding and community involvement through quality international programs for youth and for adults. Hosting is an unforgettable experience for the whole family that allows all family members to discover the culture and history of another country. Foreign students are between 15and 18-years old and come from more than 30 countries around the world. AFS is currently looking for families in the Orono and Newcastle area to host young students from Italy and Japan for a four-week period, as part of its Summer Program. Students in the Summer Program will attend local English as a Second Language classes on weekdays from 8:30 - 11:30 a.m., and participate in organized activities from 11:30 a.m. to 4:30 p.m. In the evenings and on weekends, the students will live with their hosts as a member of the family, and participate in family activities and chores. Students want to know about our culture, improve their English and are ready to live by the rules of their host families. The Summer Program runs from Sunday, July 18 to Sunday, August 15, and will include four girls from Japan, three from Italy, one from Spain, and one from Quebec, according to AFS's local co-ordinator, Rose Flamminio. AFS families receive no pay; getting a new son or daughter is the reward. Host families will discover a new culture and will have a life-changing experience, making friends from around the world. By hosting an international student with AFS Interculture Canada, families benefit from a wide range of support provided by a dedicated team of staff and volunteers. AFS is also looking for people in the community to volunteer their time transporting student to various activities. Community organizations are also being asked to get involved by hosting activities that will allow the international students to learn more about our culture and introduce them to local pastimes, customs and activities. Serve as a side dish with your favourite fish or meat. Preparation Time: 10 minutes Cooking Time: 40 minutes Serves: 6 Ingredients: 2 tbsp (25 mL) olive oil 1 cup (250 mL) quick-cooking pearl or pot barley 1/2 cup (125 mL) slivered almonds (optional) 1 cup (250 mL) diced Ontario Onion 2 cloves garlic, minced 1 tbsp (15 mL) dried dill weed 1 carton (900 mL) vegetable or chicken broth1 lb (500 g) Ontario Asparagus, trimmed and cut in 1-inch (2.5 cm) pieces 1/4 cup (50 mL) grated Ontario Parmesan Cheese (optional) 1 lemon, grated Preparation Instructions: In large skillet, heat oil over medium-high heat; stir in barley, and almonds (if using) to toast, about 3 minutes. Add onion, garlic and dill weed; cook stirring for 2 to 3 minutes. Add broth; cover and bring to boil. Reduce heat to medium; cook for about 30 minutes or until almost tender. Stir in asparagus; cooking, uncovered, for 3 to 5 minutes or until tender-crisp and liquid is absorbed. Stir in cheese if using. Sprinkle with lemon rind. Tip: Substitute 3 tbsp (45 mL) finely chopped fresh dill for dried dill weed and add with asparagus.
