Favourite Recipies SPICY ORIENTAL GRILLED STEAK 1 lb flank steak 500 g 3 tbsp Lea & Perrins 50 mL Worcestershire Sauce 2 tbsp soy sauce 25 mL 1 tbsp rice wine or sake or sherry 15 mL 1 tbsp EACH minced fresh 15 mL ginger and garlic 1 tbsp sesame oil 15 mL 1/2 tsp hot pepper flakes 2 mL Fresh coriander sprigs With sharp knife, score both sides of steak at 2-inch (5 cm) intervals; place in sturdy plastic bag. Combine Lea & Perrins Worcestershire Sauce, soy sauce, rice wine, minced ginger, garlic, sesame oil and hot pepper flakes Pour over steak, close bag anc refrigerate for at least 6 hours oi overnight, occasionally turning bag over. Remove steak iron: marinade, reserving marinade ir small saucepan; bring to boil anc boil 1 minute. Keep sauce warm on side of grill. Meanwhile, place steak or greased grill over medium-high heat; grill, brushing often with 1 marinade, for 4 to 6 minutes pej side or until rare. Transfer to cutting cutting board, pour remaining marinade marinade on top, cover with foil and lei stand for 5 minutes. Thinly slice on diagonal and garnish with coriander sprigs prior to serving. Makes 4 servings. WORCESTERSHIRE- GRILLED VEGETABLES WITH SPICY PEANUT SAUCE Spicy Peanut Sauce 1/3 cup smooth peanut butter 75 mL 1/4 cup Lea & Perrins 50 mL 1 tbsp Worcestershire Sauce EACH granulated sugar, 15 mL soy sauce, rice vinegar and water 2 cloves garlic, minced 2 2 tsp minced fresh ginger 10mL Pinch hot pepper flakes Pinch 1/4 cup chopped fresh coriander 50 mL 4 small new potatoes 4 4 green onions .4 2 small eggplants 2 2 (slender Asian or Italian) small zucchini or 2 8 yellow summer squash large mushrooms 8 1 sweet red or yellow pepper 1 2 tsp Lea & Perrins 10 mL 2 tsp Worcestershire Sauce vegetable oil 10 mL Spicy Peanut Sauce: In a blender or food processor, combine combine peanut butter, Lea & Perrins Worcestershire Sauce, sugar, soy sauce, vinegar, water, garlic, ginger ginger and hot pepper flakes; blend until smooth and transfer to a small bowl. Stir in coriander and set aside. (Sauce can be prepared up to 2 days ahead, covered and refrigerated.) Cook potatoes in boiling salted water for about 15 minutes or until almost tender; cut in half. Slice root, end and any shaggy parts from green end of onions. Trim eggplants and zucchini; slice in half lengthwise. If using portobel- lo mushrooms, cut off stems. Cut pepper lengthwise in four strips, removing seeds. In small bowl, stir together Lea & Perrins Worcestershire Sauce and oil. Brush vegetables all over with Worcestershire-oil mixture and place on greased grill over medium-high medium-high heat. Grill from 5 to 10 minutes, removing vegetables to a warm platter as they are tender and somewhat soft. Serve hot with Spicy Peanut Sauce. Makes 4 servings.
