Plan to eat asparagus the same (t;1v. you buy it, but if it community has a good replica of the Kirby United Church embroidered on it. Rev. Then put the stalks in a plastic bag, refrigerate and plan to use within two days. To prepare asparagus, break off the woody stems just where they snap easily. Then wash the stalks thoroughly thoroughly and carefully to remove remove any sand from under the scales. To cook asparagus, you can boil, steam, stir-fry or bake. The important thing to remember remember is never to overcXk it. For best flavour, cook asparagus just until it is crisp-tender. If boiling, do so for, about five to seven minutes. To pan-fry, cook in a small amount of melted butter for about one minute, turning the spears often to make sure they're nicely coated. Then put the lid on and steam the asparagus for five minutes. When asparagus has been cooked, it can then be served either, hot or cold. When hot, serve it with a bit of butter, salt, pepper and some seasoning seasoning such as nutmeg, basil or thyme. Or serve it with hollandaise sauce, grated cheese or crumbled bacon. To serve cold, try marinating asparagus spears in a vinaigrette vinaigrette dressing or roll spears in a slice of cold meat and serve with a ' mustard-mayonnaise dressing. For an hors-d'oeuvre, let guests dip cold cooked or raw asparagus spears into a hot lemon-butter sauce or cheese- based dip. Asparagus crepes makes a delicious appetizer or luncheon dish and fresh cream of asparagus soup is a very tepipting dish any time. No matter how you decide to serve Ontario asparagus . this summer, enjoy its unique* delicious flavor often. , ' Expresses concern over penal system "Nothing is going to change until the ceremony at large is alerted, to the cost, both human and financial, of our current penal system". This is the conclusion of the Rev. David McCord speaking to. the 56th Annual Meeting of the Bay of Quinte Conference of. the United Church of Canada which met at McArthur McArthur Hall, Kingston from May 22nd to 25th. McCord is Executive Director of the Church Council on Justice and Corrections, and for ten years was chaplain to the Cowansville Institution, a Federal Penitentiary. "The community is the cradle of crime", says McCord, and it is the community that has to be alerted to the need for reform, and it is the community community that has to become involved in alternatives to incarceration. The financial costs are horrendous in our present system. $28,000 per year,, minimum is the cost, of keeping a person in our , Federal Penitentiary system. "How many families here in Kingston are earning that sum in a year?" asked McCord. In terms of taxes paid by the average Canadian family the sum is almost precisely $365 per year or $1 per day. This $1 figure translates into 64c for policing, policing, 30c for imprisonment, and,the remaining 6c must •' deal with all community- based programmes and crime prevention programmes programmes in general. "Our priorities priorities are in reverse ordpr to the way they should'be," saysi McCord. It is possible and essential to involve the community in the preventive and rehabilitative rehabilitative aspects of crime. Every community has ample resource personnel who are keen to share their insights such as police officers, community community chaplains, prison officials, officials, among others. The presentation given by McCord was part of the report of the Conference Division of Mission in Canada. A motion asking the Conference to make the issue of Justice and Corrections one of its major concerns for the year ahead was moved and carried. Study projects will now be undertaken by the seven presbyteries of the Bay of Quinte Conference and local congregations encouraged to discover how they might become involved in the 'Alternatives 'Alternatives to Incarceration'. His unprecedented six wins in seven starts which secured him the 1977 Citicorp Can-Am title plus a convincing victory in the season-opening Can- Am at Golden State Raceway in California on May 25 assures that he will be a pre- race favourite. Driving talent and previous Can-Am , record notwith- ■ standing, Tambay would also be a favourite just because he will be driving for the winningest team in recent Can-Am history. The Jim Hall-Carl Haas combination has won Indianapolis in two of the past three years, plus the last three Can-Am championships championships with three different world class drivers. Thé Hall-Haas duo race British : Lolas designed and built by famed racing car ■builder Eric Broadley and "improved" by Hall at his Midland, Texas private racetrack racetrack known as Rattlesnake Raceway. The Texas improvements improvements earn the , Hall- Haas edrs the added designation, designation, Chaparral, a name that-alj of Hall's cars have carried' since he became a racing car builder in 1962. Tambay joined the Hall- Haas effort in 1977 as a budding Formula 1 star after the regular Chaparral Lola driver Brian Redman crashed crashed heavily While practising for the Mt. "Tremblant, Quebec Quebec Can-Am race. That was when Tambay's winning , streak began as he won six of \. seven races and the Can-Am title. In the same year he also scored his best Formula 1 result, fifth in the Canadian Grand Prix at Mosport. In 1978, Tambay joined the McLaren Formula 1 team and suffered two seasons of bad .fortune when the McLaren .team's performance plum- metted, taking Tambay with it. However, for 1980 he has rejoined Hall-Haas who had in the two intervening years taken two more Can-Am championships with Alan Jones and Jacky Ickx driving. Virtually picking up where he left off two years ago, Tambay's first Can-Am victory victory this season was at the Wheel of the latest "ground effects" Chaparral Lola T- 530. His win was at the expense of an all-star field that included Elliott Forbes- Robinson in 2nd place driving a Lola T-530 for Paul Newman and Formula Atlantic star Bobby Rahal third in Herb Caplan's new "ground, effects" effects" Prophet. The next race in the ten-race Citicorp Can-Am will be held at Mid-Ohio Sports Car Course on June 8th followed by the Molson Golden Golden Can-Am at Mosport, June 20, 21, 22. The Mosport weekend starts with open practice on Friday, followed by practice and qualifying Saturday and a full day of racing Sunday, June 22. Abstract paintings at Samuel gallery An exhibition of new work by gallery artists featuring abstract paintings by Ray Mead will open at the Margot Samuel Gallery on June 3, 1980. This is the first time the large canvases of Ray Mead, . one^f the Painters Eleven, will be exhibited. > At an exhibit of his work'at the Margot Samuel Gallery in November, 1979, ,16 of Mead's collages were sold much to the surprise of Mead and his wife .whom he had told not to be surprised if no one showed up. But within one hour the . first ten were sold. Rhy Mead is an art director at MacLaren* advertising in . Montreal, the firm he began working for 33 years ago in Toronto. In 1953 he- was invited along with six other artists, including Alexandra Luke (Mrs. C.' Ewart Me- - Laughlin of Oshawa), to, exhibit abstract paintings as. part ' df a merchandising promotion in fhe Robert Simpson' Company's fifth floor room displays in Toronto, Toronto, to be called "Abstracts at Hom.e". When the seven. artists assembled around a stepladder for a publicity photograph, they decided to form their own society. To their founding meeting they invited four other artists and it was one of those, Harold Town, who suggested the name Painters Eleven. Of the first exhibition of the work of Painters Eleven at the Roberts Gallery in Toronto Toronto in 1954, Robert Fulford, editor of 'Saturday Night', said, "That was the first of eighteen Painters Eleven shows, shows that changed art in English Canada beyond recognition. When Painters Eleven started out, it was still thought quite odd to paint a picture without a recognizable recognizable subject The Margot Samuel Gallery is located at 899 Nelson Street in Oshawa and is open from noon to 4:00 p.m., Tuesday to Saturday. Thfe show continues until June 21st. Ray Mead's first one-man exhibition in Ontario will take place in Sault Ste. Marie, Ontario from October 2 to 25, 1980 at the Art Gallery of Algoma during the Algoma Fall Festival. The exhibition is being' co-ordinated by Margot Samuel and the works v will be on loan from her gallery in Oshawa.
