(T kg) carrots, peeled and sliced 1 large rutabaga, peeled and cut in thin strips 1 red pepper, chopped 6, green onions, chopped 2 cups ketchup 3/4 cup oil 1 cup sugar 1-1/2 cup wine vinegar 1/2,teaspoon hot pepper sauce Cook carrots and combine with rutabaga, peppers .and oniorts. Combine remaining ingredients and marinate vegetables in refrigerator for 12 to 24 hours. Ladle pickles into jars leaving 1/4 inch (1 cm) headspace. Seal and process in pressure canner for 15 minutes. Makes 6 pints (500 mL) jars. Spiced Apricot Relish 2 peaches, peeled and seeded 2 oranges, peeled 2 lemons, peeled 1 lb (500 g) fresh apricots 8 medium apples, cored 2 onions, peeled 1.5 kg sugar . 2'cups white vinegar 2 cups water 2 chilies, seeded and chopped chopped 2/3 cup slivered almonds 1 teaspoon whole peppers 1 teaspoon whole allspice 1 teaspoon mustard seed 1 teaspoon whole cloves 1 teaspoon celery seed Chop fruit and onions into small pieces. In a large saucepan combine sugar, vinegar and water. Place spices in a cheesecloth bag. Add fruit, onions, chilies and spice bag to saucepan. Cook 20 minutes, add almonds and continue cooking cooking until relish is desired consistency, about 10 minutes. Remove spice bag. Ladle into hot sterilized jars.
