I was not surprised to read on the Canadian Press wire recently that sexual barrassment is becoming the most prevalent kind of complaint which the Ontario Human Rights Commission receives these days. Nor was I surprised to learn that the greatest number of such complaints come from women in the service industry, industry, particularly waitresses. Waitresses are in an insidious insidious position, not just when it comes to drunken Lotharios, but in regard to many of the standard benefits of the Canadian workplace. Most people imagine imagine that waitresses manage to cheat the income tax on tips, but Revenue Canada knows as much about the tip structure in this Country as those on the receiving end, and if there evef was a tax advantage in that kind of cash income, it has long since vanished. And when you consider that many of the fringe benefits available to waitresses are based on the straight salary, without the gratuities added in, the financial security is hardly breath-taking. The males who feel that waitresses are fair targets for sexual advances they wouldn'J dream of making to wives or girlfriends, if they have any, are just the iclhg on the cake after eight, tiring hours of being cheerful on your feet. It's hard to understand why some of the jerks I've seen making passes in restaurants could possibly imagine that they'd be attractive, attractive, to anyone. What is it about being a customer in a restaurant which makes them imagine they are ir- resistable? Is it a lousy two dollar tip on thirty dollars worth of food and drink? Naturally, it is the youngest and prettiest girls who are the major targets for legions of middle-aged slobs. According to the Human Rights Commission, it's not just dirty, jokes, and propositioning, propositioning, long after the waitress has demonstrated that she's not interested, but "actual physical grabbing." The Commission describes some of the evidence it has received as "blatant and terrible" proof of sexual har- rassment. Younger girls in particular don't know how to handle it. Do you put the patron in his place, brutally, brutally, in front of the friends he's trying to impress, and kill the chance of any tip at all on an hour's hard work? Do you complain to the boss, and run the risk of being branded as a trouble-maker? Or do you put up with filth and go home at night feeling slightly sick to your stomach? The more I hear about this kind of thing, the more I'd like to get a part-time job as a bouncer. I wouldn't charge for the part on tpe sidewalk. I'd do that for nothing. Summer Fruits For All Seasons Banana Jam A delicious addition to a peanut butter sandwich. 750 mL [J cups] sugar 750 mL [J cups] water 8 ripe bananas 25 mL [2 tbsp] Fruit-Fresh, ascorbic acid color-keeper 1 mL [1/4 tsp] ground cloves Combine sugar and water in a large saucepan. Boil uncovered for 10 minutes, stirring often. Peel and chop bananas, stir in Fruit-Fresh and cloves. Add banana mixture to sugar solution. Cook, uncovered, over low heat stirring constantly for 45 minutes or until mixture is pale yellow and thickened. Pour into hot sterilized jars. Process in a boiling water bath for 5 minutes. Makes about 1.25 L (5 cups)*., Zucchini/Pear Jam 1.5 kg [3 lbs1 zucchini IL [4 cups] sugar 50 mL [1/4 cup] finely chopped candied ginger Grated peel of 1 lemon Juice of 1 lemon 1.5 kg [3 lbs] pears [about 5] 25 mL [2 tbsp] Fruit-Fresh, ascorbic acid color-keeper Coarsely shred zucchini. Stir in 500 mL (2 cups) sugar and let stand for about 6 hours. Strain off liquid and pour into a large saucepan. Stir in the remaining 500 mL (2 cups) sugar. Add candied ginger, lemon peel and lemon juice. Boil, uncovered, for 10 minutes, stirring occasionally. Peel, core and chop pears. Sprinkle with Fruit-Fresh. Add zucchini and pears to sugar syrup and simmer, uncovered, for 3 hours. Fill hot clean jars to within 1 cm (1/2 inch) of rim. Tightly screw on lids and process in a boiling water bath for 15 minutes. As an alternative to processing, fill sterilized jars to within 1 cm (1/2 inch) of rim, then immediately immediately pour about 1 cm (1/2 inch melted paraffin wax oyer jam. Makes 1.25 L (5 cups). Canned Whole Pears 12 firm, ripe Bartlett pears Fruit-Fresh, ascorbic acid color-keeper 1.5 L[6 cups] grape juice 500 mL [2 cups] water : 500 mL [2 cups] sugar Peel pears, leaving stem attached. As fruit is peeled, deposit in a Fruit-Fresh solution made by dissolving 45 mL (3 tbsp) Fruit-Fresh in 2 L (8 cups) of water. Combine grape juice, water, sugar in a large kettle. Heat to boiling and stir to dissolve sugar. Add pears, return to a boil, reduce heat and simmer 10 minutes. Using a slotted spoon, remove pears and pack into hot dean canning jars. Pour juice over pears, leaving 1 cm (1/2 inch) at the top. Run sterilized knife around inside of jars to remove air bubbles: Fit jars with lids and tighten. .Wipe • jars and process in a, boiling water bath. Jar lids should be submerged by at least 1 cm (1/2 inch) water. Cover canner, and bring water to a boil. Processing is timed from the moment the water begins to boil. Keep water at a gentle boil and process 15 minutes. Remove jars from canner and set on a cutting board or cloth to cool. When cool, test seal by pressing lid with finger, if it stays down it has properly sealed; if it pops up, the seal is not good. (Then refrigerate those jars having improper seals and use within a few days.) Label and store jars in a cool, dark place. Makes 3 or 4 large jars.
