Turkey giblets (liver and heart) '/z cup (125 ml) butter 8 cups (2 L) soft-bread crumbs (made with day-old bread) 1 cup (250 ml) finely chopped celery 1 cup (250 ml) finely chopped onions 2 cups (500 ml) finely chopped McIntosh Apples !4 cup (50 ml) chopped fresh parsley 1 tsp (5 ml) granulated sugar 3 A tsp (3 ml) salt 'A tsp (2 ml) each thyme and savory Vi tsp (1 ml) each sage and pepper by Chris Faulkner Trim giblets, removing all membranes, cut into 'A-inch (5 mm) cubes. In skillet, melt 2 tbsp (25 ml) of butter over medium heat. Cook giblets until until browned, about 5 minutes, stirring occasionally. Remove to large bowl and toss with bread crumbs. Melt remaining butter in skillet. Add celery and onions. Cook over medium heat about 7 minutes or until vegetables are softened, stirring occasionally. occasionally. Add to, bread crumb mixture along with apples, parsley, sugar, salt, thyme, savory, sage and pepper, tossing tossing lightly to mix. Let cool completely before stuffing turkey. Makes 8 Cups (2 L). Preparation Time: 25 minutes. White Chocolate Truffles Royale !4 cup (50 ml) whipping cream 6 squares Baker's White Choc, (each square cut into 4 pieces) 1 tbsp (15 ml) soft butter 1 tbsp (15 ml) orange liquer (optional), 6 squares Baker's White Choc. Bring cream to a boil over medium heat then reduce to low heat. Add white chocolate, butter and liquer; stir until melted. Freeze . mixture until firm enough to handle, about 3-4 hours: With a teaspoon, form mixture into small balls; freeze 20 minutes. Partially melt remaining white chocolate over HOT not boiling water. Toss each ball in melted chocolate. Place on a waxed paper-lined cookie sheet and chill until firm. Makes about 1 'A dozen truffles. The 1988 rebate equals 100% of the municipal taxes levied on managed forest assessment for owners of woodlots four hectares or greater.
