Preparation Time: 35 minutes Cooking Time: Top of stove: 30 minutes Oven: 25 minutes • Serves 8 1 cup (250 mL) all-purpose flour 3/4 cup (175 mL) granulated sugar Pinch salt 2/3 cup (150 mL) butter 1 tbsp (15 mL) shortening 8'to 10 Ontario McIntosh, Cortland or 'Empire Apples In large bowl, stir together flour, 1 tbsp (15 mL) sugar an,d salt. With pastry blender or two knives, cut in 1/3 cup (75 mL) of the butter and shortening until mixture resembles coarse crumbs. Pour 2 to 3 tbsp (25 to 45 mL) cold water over dry ingredients. Toss mixture together with fork until well mixed and mixture can be formed into a ball. Wrap ball of dough tightly in plastic wrap; refrigerate for 30 minutes. • " • Meanwhile, peel and core apples; cut each apple into eighths. Spread remaining butter over bottom of heavy 9-inch (23 cm) oven-proof skillet that is at least 2-1/2 inches inches (6 cm) deep. Sprinkle evenly with remaining sugar. Place apple pieces in butter-sugar mixturé, wedging tightly together, filling bottom of skillet. Cook, uncovered, without stirring, over medium heat for about 30 minutes or until syrup (which foams around apples) has thickened and turned golden brown. Occasionally baste apple tips not covered by syrup. Remove skillet from heat and let cool for 10 minutes. . Meanwhile, roll pastry to form circle slightly larger larger than top of skillet. Place pastry over apples, tucking edge in between apples and skillet. Cut 4 steam vents in pastry. Bake in 425"F (220°C) oven for 10 minutes. Aeduce heat to 375°R (190°C); bake for 15 minutes or until crust is golden. Let cool for 5 minutes. Place serving plate over tart and using oven mitts, quickly invert. Place any apple pieces that stick in skillet on tart. !
