References available upon request STRAWBERRY ANGEL SHORTCAKE This recipe will become a favourite to make whenever the "fast and fresh" mood takes over. Remember, the supermarket carries bakery angel-food cakes to speed up the preparation. Preparation Time: Chilling Time: 3 cups (750 mL) 3 tbsp (50 mL) 3 tbsp (50 mL) 3 tbsp (50 mL) 3 1 cup (250 rnL) 1 Garnish: 8 15 minutes (including preparation of strawberries) 1 to 2 hours Serves 8 sliced Ontario Strawberries granulated sugar rum or 2 tsp (10 mL) rum extract, divided orange juice squares white chocolate whipping cream medium angel food cake (about 340 g) large Ontario Strawberries Fresh mint leaves Combine strawberries, sugar and 1 tbsp (15 mL) rum or 1 tsp (5 mL) rum extract in a medium bowl. Combine remaining rum or rum extract and orange juice in a small measuring cup. Melt chocolate slowly over hot water in double boiler 'or small bowl. Stir occasionally. Cool to room temperature. Beat whipping cream and cooled chocolate until soft peaks form. Slice angel cake horizontally into 3 layers. Place one layer on large cake plate. Drizzle with 1/3 of rum- orange mixture.' Top with 1/3 of cream-chocolate mixture and 1/2 of Sliced strawberries. Repeat layers, ending with cream-chocolate spooned over top of the cake and partially .down sides. Garnish with whole strawberries and mint leave. t Refrigerate 1 to 2 hours. To serve cut into 8 pieces.
