Lightly brush pastry with water; sprinkle with remaining 1/2 tsp (2 mL) sugar. Bake in centre of 400°F (200°C) oven until pastry is deep golden brown, 30 to 40 minutes. Let cool on baking sheet set on cooling rack for 10 minutes; then carefully remove to cooling rack.
