In large skillet, heat butter over medium heat; cook leeks, stirring, stirring, for 3 minutes. Stir in garlic; cook for 1 minute. On lightly floured surface, roll out pastry to 14-inch (35 cm), round. Transfer to large baking sheet or pizza pan. Arrange half of the potato slices in single layer over pastry, starting 2 inches (5 cm) inside edge. Sprinkle 1 tsp (5 mL) of the flour; season with salt and pepper to taste. Spread leeks over potatoes; sprinkle with half of the cheese. Add remaining potatoes in layers; sprinkle with remaining flour, and salt and pepper to taste. Arrange broccoli over potatoes. Sprinkle with remaining cheese. Fold edges of pastry toward centre, overlapping slightly to form wide edge. Pour 1/3 cup (75 mL) cream over vegetables inside pastry. In small bowl, mix egg yolk with 1 tsp (5 mL) cream; brush over edges of pastry. Bake in 425°F (220°C) oven for 10 minutes.
