MURPHY, Proprietor Starters and Cheese One of the most important factors in determining the quality of the cheese js the starter which is used to hasten and control the acid fermentation of the milk, and it is, therefore, highly important that uniform starters of high quality be used. A starter correctly made and handled cannot harm the procuct in any way, whatever the quality of the milk may be. The question of starters is wholly under the control of the maker, and he has only himself to blame if the quality of his product is injured by the use of a poor starter. Dundonald Y. P. U. For small fish, Canada's sardines take a big place in the country's export trade. They're the smallest fish landed in the Dominion's commercial fisheries but snugly packed in tins they travel to many export markets and last year's travellers to these other countries were worth $694,000. That is big business to be done in fish which individually measure only three or four inches in length.
