Bulletins are being prepared to send to the schools to instruct the pupils in the card af milk. Then the Woman's Institute is taking it up. The cheese factories mist be kept clean, the maker and all his utensils must be kept clean, and the instructor will pay particular at- tention to this matter. Anyone keep- ing milk in rusty cans or in unsani- tary places they will be made to rec- tify it, and the instructor's duty will be to instruct the farmer. To protect the producers and mak- ers a board of directors has been ap- pointed and no one is forced to adopt any of the ihepector's suggestions un- til they go to the directors. They are only asked to do what is fair. The object of the instruction is to pet all the cheese uniform in the whole province. This cannot be done unless all. the makery co-operate with the instructor. There is no fee for the in- struction and every one is asked to help on the work, In reference. to the-making -of chewed he said be was confident that most of the makers knew their business. It is said that Canada -has the poor- est cheese factories in the world, yet Canada has the best makers and other countries are sending here for in structors. Other countrics make bet- ter cheese than does Canada. If that is so then it is up to the maker to find out where the defect is.
