' The certificate of the secretary, or of the analyst or the assistant ane alyst of the provincial board of health, given in writing, shall be prima facie evidence of the ingredients and quantities thereof contained in any bread submitted to the provin- cial board of health for analysis, and shall be receivable in evidence without proof of the signature or of the official character of the secrctary or the analyst or assistant analyst of the provincial hoard of health ap pearing to have signed the same and without further proof thereof in all legal proceedings under this act.
