Me- Mullen, and 'he and his brother have erected an experimental plant in which the process of saving in food form the total quantity of the solids contained in milk is now being tested. Mr. McMullen points out that in ev- ery hundred pounds of milk there are thirteen pounds of solids, In butter there are but four and a Fal pounds of the milk solids for every hundred pounds of the milk, and in cheese only eight or nine pounds,' the remainder of the thirteen pounds of milk solids be ing lost in the making. Mr. McMul len, by a patented process of evapora- tion, saves the entire thirteen pounds of solids in the form of a new dairy product. It is somewhat more éom- pact than butter, but may be spread upon bread, It does not "go bad" quickly, and under proper conditions will keep for years, This new foodstuff is expected to fill a Jong felt want. The cost of butter in winter, even in Canadian cities, rises almost - to prohibitive prices. Many people are forced to use substi- tutes that do not contain anything like the food value of butter. Put the McMullen process will give the farmer 8 better price for milk than the cheese or butter factories can pay, and will give the consumer a larger quantity of dairy product for less money than but- ter costs. Science applied to the ex- traction of the total quantity of the solids in milk will prove as beneficial to the consumer as to the producer, because they will divide between them the saving following upon the appli- cation of scientific principles.
