In response to & reader's request for a recipe for "Ice Box Cake" pub- lished. some time ago, 16 house- keepers 'have. kindly sedt in their method of making this kind of cake. It will take a little time to publisly I all these recipes, but I shall do so gradually, except in cases where they are almost identical. Here are a few: LH.J.: "Chocolate Tee Box Cake: Dissolve a half-pound cake of sweet chocolate in the top of a. double boiler with two tablespoons of sugar and three tablespoons of water add- ed. Flavor with one-Ralf teaspoon of vanilla then add the yolks of Tive eggs and stir till it thickens. Now remove ftom fire, let cool, then add the five egg-whites stiffly whip- ped. Line a mold with waxed paper. Put in layer cake or sponge cake cut in thin pieces (or use split lady- fingers), then pour some of the chocolate mixture over this cake layer; add another eo layer of the cake, another of: the chocolate, etcetera, till all is gone, having "a cake layer on top. Slip the mold in- to your ice box overnight and next day serve, turned out of mold, top- ped with whipped cream." M. A. G:: "Tce Box Oake with Nuts: Line a mold with Ww paper. Then line the form with lady fingers. Put one-Balf pound of sweet butter into a mixing bowl and cream into it two cups of powdered sugar, the juice and rind of ene lemon, the yolks of four eggs and one and one- half cups of ground pecan nuts. Now fold in the' stitfly-beaten whites of the four eggs and spread half' of Ahis mixture on top of the first layer of lady fingers. Add adother lady- uncooked egz-sugar-nut mixture, and top with a final layer 'of lady. fing- ers.
