GRADING OF EGGS Instances areb eing brought to the attention of the Dominion Department of Agriculture almost daily, which prove conclusively the necessity for such regulations as became effective in July dealing with the purchase and sale of eggs for domestic consumption. An example of general interest was seen recently in the report of one of the egg inspectors working in Toronte. The inspector in question was asked by a retailer as to what he should do with a case of eggs just received from the wholesale, which, he was confident, was not according to the grade stated on the case. He was advised to lay a complaint with the wholesalér or he himself would be held responsible for the eggs after 24 hours. The com- plaint was laid, and in laying the complaint, the retailer told the whole- saler that an inspecor would examine the eggs in his store. Upon proceed- ing to the store the inspector arrived just in time to see the case of eggs in quesion being put on the wholesaler's delivery truck, and as a result he did not make ap examination of the eggs. The retailer said .the eggs were sup- posed to be "Extras" but that they were small and dirty and weighed only 23 ounces to the dozen. The im- nedisgte removal of the eggs by the wholesale firm would seem to prove that they were willing to acknowledge a mistake had been made. The inspector's report further goes on te state that while the case con- taining the eggs was marked it was not marked sufficiently conspicuous to comply with regulations. The end of the case was covered with the distri- buting firm's brand and on this brand | appeared the words "Select Bggs" On the bottom cleat of the cage ap- peared in very poorly stencilled letters the words "Fresh Extras". While this could not be termed a direct eva- sion of the regulations such practice is not in accord with the true sense of the regulations and does not tend to create that bond of confidence be- tween the different handlers of eggs pated, the regulations will be instru- mental in doing.
