' Date Crumb Pudding 6 egg whites 2 cups sugar^ 1 cup soft bread crumtoB (packed tightly) 1 cup chopped dates - • . 1 cup chopped nuts, (pecans preferred) 3 tab. baking powder . 2 tsp. vanilla tsp. salt , , . < Beat egg whites until very stiff. Fold into sugar. Add dates, nuts, bread crumbs, salt and vanilla. Mix lightly; Spoon into baking dish 8x10x3 or one of equal volume but shallow. Bake' one hour in slow oven, 250^275 degrees. When cool, serve in squares about 3x3, with vanilla ice cream on top. ' Store left-over pudding covered, in refrigerator.
