FROZEN COOKED TURKEY LOSBS SOME FLAVOR Too much holiday tukey need not bother you because you "&an freeze the surplus if you are willing to sacrifice some of the flavor says Frances O. Van Duyne of the University of Illinois foods research staff. She advises using the meat fresh if possible because the original flavor changes during freezer Storage. But you can freeze it easily if you need to. v- Too much exposure to air gives turkey a warmed-over flavor and odor and also dries the meat, so it is best to freeze it in rather large pieces and pack it tightly. Freeze turkey products as soon as possible after cooking and cooling. Remove the bones to pack the pieces compactly and save storage space. If you freeze dressing and gravy, pack them separately. You may want to reheat and cool the gravy before freezing it to decrease the amount of bacteria that# may be present. Wrap t#e turkey tightly Jn; freezer-grade aluminum foiji pt cellophane of in one of the plastic wrapping materials used to protect frozen foods. Because freezer storage affects the flavor, do not leave the meat ih the freezer more than two or three months. _ . You can thaw pieces of'frozen cooked turkey in tile original package and serve it as is or use it; in sandwiches or salads.
