Lent is one week away. Pur- ,pose of the recipe suggestions is to help assure homemakers that they will provide their families with healthful meals during the Lenten season. Dairy products help assure healthful, tasty meals without detracting from the sacrifices involved in limiting what people eat for those who observe traditional fasting and abstinence, Charles Weingart of McHenry, president of the McHenry County Dairy Promotion Council, observed today. As part of the Dairy council's Lenten promotion, members are working with grocery stores and restaurants. Miss Boppart's four recipes are being printed on a table-tent folder, and McHenry county restaurants arc invited to request a supply, without cost. Henry Edgerton, secretary of the Dairy Promotion council, has the supply and may be called at 338-2000. These table tent folders are for restaurant customers to take home so they can try the recipes suggested. Betty, who is a freshman at the University of Illinois, chose the recipes during her between-semesters break in late January. They include two main dishes, a sandwich and a simple dessert. Other Treats Main dishes include a cottage cheese, scrambled eggs dish, a good way to encourage youngsters to receive dairy products. A salmon loaf, attractive to those who sit down at the supp e r t a b l e , f e a t u r e s c o t t a g e cheese as an integral ingredient. An asparagus au gratin sandwich is easy to prepare and uses indgredients Usually available in the home. For her fourth recipe Betty has chosen a vanilla wafer delight, tasty yet simple and easy to prepare. In the weeks ahead, Miss Boppart's four recipes will be provided county newspapers and homemakers will have an additional chance to obtain these recipes--all taste-tested and approved by the American Dairy Association of Illinois' •home economists. " The Dairy Promotion council meets tonight at the Farm Bureau office to complete JJsnten promotion plans, discuss June Dairy Month ideas •and hear from Loren Massey, ADA of Illinois director from this district, on reasons behind the ADA's decision to drop the 1966 Dairy Princess contest. At the last Dairy Promotion council meeting, McHenry county enthusiasts voted to continue with the local contest, for the McHenry County Dairy Princess, through the years, has been kept busy as en ambassador of goodwill for the entire dairy industry. Tuna Corn Chowder 2 cans (6V2 or 7 ourjees each) tuna in vegetable oil 1 medium onion, sliced 1 can condensed cream of celery soup 1 can (1 pound) cream style corn 1 can (1 pound) sliced white potatoes 3 cup3 milk Mi teaspoon powdered basil V2 teaspoon celery salt 2 pimientos, chopped 1 tablespoon chopped parsley Drain oil from one can of tuna into deep kettle. Add sliced onion and cook until tender but not brown. Stir in condensed cream of celery soup. Add tuna, corn, potatoes, milk, basil and celery salt. Bring to a boil; simmer 5 minutes. To serve, add pimiento and parsley. Serve with cabbage salad or green vegetable, and lots of crisp crackers. YIELD: 6 servings. SHOP IN McHENRY LINCOLN TALK WELL RECEIVED BY WOMAN'S CLUB The February meeting of the McHenry Woman's club was held on Friday, Feb. 11, at 1 p.m., in the fellowship room of the Community Methodist church. Rev. Carl A. Lobitz, pastor of Zion Lutheran church, opened the meeting with a short period of meditation. Following the business meeting, Mrs. Adelaide B. Patzke, secretary of the McHenry County Association for Retarded Children at Wonder Lake, gave a brief, enlightening talk in regard to the great need for funds and for volunteer workers for that very worthwhile organization, which is entirely dependent upon public support for its maintenance. Mrs. George Kleinhans, chairman of the education division, as well as chairman of the day, presented the guest speaker. Members and guests were privileged to hear a beautifully illustrated lecture on "The Land of Lincoln," given by the team of Joe and Els McCloy of Chicago, with Mr. McCloy as narrator. In the absence of Mrs. Peter Justen, membership chairman, Mrs. Donald Gerlitz, first vicepresident and program chairman, welcomed two new members into the club, Mrs. Ted A. Bandelon and Mrs. Robert A. Stueben. Both were pinned with an attractive Valentine corsage by Mrs. Hugh G. Locker, president. In the absence of Mrs. Walter Carlson, due to illness, Mrs. Jana Williams Is Christened Little Jana Christine Williams, daughter of Mr. and Mrs. Richard T.
