July 21-28 & Aug. 4,1966) CAMPING NEWS Planning the menu according to the type of camping is a must; also to cooking facilities and to refrigeration available. When possible, use canned foods which eliminate need for refrigeration and reduce the time spent preparing nad cooking. Don't forget the cook needs a vacation also. Incidentally, the man of our house does the cooking when camping, and I love it. Choose foods that keep well and need no special care. Perishable items, especially salads made with mayonnaise, raw hamburger and cream pies should either be refrigerated enroute and at the camping site or left at horhe. We always take some cooked foods from home for the first evening meal in camp or for the first day on the road. Roast beef is a good choice because the left-overs keep well and can be used for sandwiches or reheted in canned gravy. Soups are a must on the grocery check list. Bouillon cubes and soup mixes are light in weight and full of goodness. Take along a jar of peanut butter and peanuts in the shell. They are sources of quick energy. Plan one-pot meals when possible, such as dried beef and peas heated in a creamed variety of soup and se rved on bread toasted over an open fire. If you only have one burner or are limited to a campfire, use a double boiler arrangement to cook two f oods. Foil-wrapped foods cooked on the coals taste great. Take plenty of paper plates along. Why wash dishes fifty-two weeks out of the year? If you depend on cooking outof- doors, be sure to take along some canned foods that can be eaten cold in the car or - tent. The peanut butter and nuts keep a long time and can be very tasty when the campfire is put out by a sudden rain. Be flexible in changing the menu; you may find fresh fruits and vegetables at a bargain along the way. Next week we will have some camper-approved menus for you to try.
