Grandma Sez • • • Characteristic o' human nature, folks slip, easily, inta th' ol ' familiar patterns o' b'havior, after th' first ex citement is o'er, no matter what be th' reason that stirred 'em up, in th' first place. Ever'body got pretty disturbed, an' made definite attempts t ' observe th' crisis, that hit pretty hard, some time ago. Word got about, that it was th' fault o' th' big companies, responsible f 'r pervidin' fuel, necessary t ' all th' comforts we enjoy, in this modern age. So, a poor excuse 's better 'n none, me thinks, an' it gives some people an out, when it comes t ' dealin' wi' their conscience, in breakin' th' law, an' disregardin' th' real warnin's, that we're runnin' out o' natural resources. So, consequently, th' speed limits ain't observed, an' th' toll is more lives lost, in th' past months, than when ever'body MR. AND MRS. DARRICK HOS1NSK1 MARRIED -- Miss Linda Olson became the bride of Darrick Rosinski in /ion l.utheran church Aug. !•. The bride is a daughter of Mr. and Mrs. Marvin Olson. Kl-I N. River road. Round Lake Heights. tried t ' git b'hind th' problem, an' help. The score dropped, noticeably, wi' th' lowered speed. Are we sich a selfish society, that we don't care about posterity, an' what '11 be left f 'r th' comin' generations? Seems only common sense, t ' this granny, that th' bounties o' Mother Earth won't last in definitely. If a body thinks about it, it poses a rather scary picture, o' future times. In only th' past fifty, sixty years, there's been more inroads into th' bowels o' th' earth, 'n in five thousand years. We're a robbin' th' till , faster 'n it c 'n be reimbursed, an' th' proof is, th' research being' done, t ' find new ways o' drainin' th' last drop, from nature's reservoirs. This lush society, so ac customed t ' bein' warm, 'n well-fed, pervided wi', not only th' necessities o' a comfortable life, but so' much o' th' good things, it 's lost th' ability t ' evaluate on a level o' reality. Ye see it ever'where, th' extravagance o' this modern day. It 's th' minority o' th' population, who teach th' younguns t ' be thrifty. Seems amazin' t ' us elders, who've seen it all happen. We formed habits o' thriftiness, in our years o' growin' up. It ain't learned so easy, after th' die is cast, an' young minds ha' accepted a way o' life. Th' young mind is malleable, an' that 's th' time t ' put th' right ideas inter it. Grandma Radtke Constitution week, Sept. 17- 23, commemorates the signing of the Constitution of the United States. Tips For The Homemaker If you planted potatoes in your home garden, freeze some of them when they are in the "new potato" stage. Not only are they especially tasty, but they seem made to order for hurry-up meals. Nancy Moore, McHenry county Extension adviser, says potatoes about the size of walnuts freeze best. It isn't necessary to peel new potatoes. Simply wash them well and scrub vigorously, or scrape them if you wish, to remove the tender skin. \ Blanch the potatoes in sr boiling water bath as follows: Potatoes one inch in diameter, 4 minutes; potatoes 1>2 inches in diameter, 7 minutes; potatoes larger than 1>2 inches in diameter, 8 to 10 minutes. Start counting the time the moment the potatoes are put into the boiling water. After blanching. chill potatoes for 3 to 5 minutes in ice cold water to stop cooking action. Drain well, package in moisture-vapor-proof con tainers and freeze at 0 degrees F To cook, add frozen potatoes to enough boiling salted water McHenry Hospital -- Branded Steak House, Crystal Lake. Quickly bring to a boil and cook gently about 15 minutes or until tender. Avoid over-cooking. Because of the increased cost of potatoes, many home gar deners are growing their own potatoes. If you are fortunate enough to have a surplus, here are some tips on making home- frozen French fries. Nancy Moore, University of Illinois Extension adviser. Home Economics, recom mends that you select medium to large potatoes. Pare and cut them lengthwise into uniform strips about ; 'h inch thick. Rinse quickly in cold water to remove surface starch. Dry thoroughly on absorbent paper Arrange in a shallow baking pan, and brush generously with melted butter or margarine. Bake in a preheated, very hot over -- 450 degrees F. - until they begin to turn brown. Turn the potatoes occasionally. Remove them from the oven, cool in the refrigerator as fast as possible, package in moisture-vapor-proof con tainers, label and freeze. The recommended storage time is one month at 0 degrees F. To serve, return the frozen fries to a shallow baking pan and bake in a preheated oven at 450 degrees F. until thawed and golden brown and tender. Turn potatoes occasionally and season to taste.
