The law assigns responsibility to the Secretary of Labor for the establishment of ad ministrative and enforcement programs to protect such rights. In addition to the slide- cassette presentation, an ERISA Compliance Officer is being assigned to answer specific questions, and to distribute Department of Labor ERISA information material that participants can take home to discuss with their families. Scheduling information can be obtained by writing to the Chicago Regional Office of the Labor Management Services Administration, Room 1033-B, Political Corner NOT FOR THE TIMID & / Timid tasters beware! Here is a robust, spicy hot chili - not for those with timid tastebuds. Rather, it is reminiscent of the great chili recipes of the sunny southwest. Cans of chili with beans, whole peeled tomatoes and tamales in chili sauce are combined to make this speedy homemade chili. Accented with bright kernels of golden whole kernel corn and topped with shredded cheddar cheese, it's a hearty chili for a brisk winter's day. Great go-alongs are crunchy corn chips or chunks of crusty French bread and a tossed salad of crisp greens. More and more packages and cans bear nutritional information giving per centage of U.S. RDA for protein, vitamin A, vitamin C, thiamine, riboflavin, niacin, calcium and iron in each serving of product. In fact, package designers are in despair because labels are leaving so little room for art these days. U.S. RDA stands for United States Recommended Daily Al lowances, the amounts of vitamins, protein and other nutrients needed each day to maintain health. These standards were deter mined by the Food and Drug Administration and must be used on food products when nutritional value of that food is men tioned. Specific amounts of nutrients in foods are not put on labels; only the percentages of U.S. RDA are given. The amount of each nutrient in a food is compared to the U.S. RDA for that nu trient; thus, if a one-half cup serving of spinach has 3 grams of protein, the package will label this as 4% U.S. RDA. Another important point to remember is that the amounts of nutrients are listed per serving, as well as in percentages. The U.S. RDA has been determined for 20 different nutrients, al though only 8 must be shown on labels. The following list is the U.S.< RDA for all 20 nutrients; those with a star C1') are the ones which must be shown. U.S. RECOMMENDED DAILY ALLOWANCES (U.S. RDA) Amount for Adults and Nutrient Children Over 4 Years Protein 65 grams' Vitamin A Vitamin C Thiamine Riboflavin Niacin Calcium Iron Vitamin D Vitamin E Vitamin B6 Folacin Vitamin Bi2 Phosphorus Iodine Magnesium Zinc Copper Biotin Pantothenic Acid 5,000 International Units 60 milligrams 1.5 milligrams 1.7 milligrams 20 milligrams 1 gram 18 milligrams 400 International Units 30 International Units 2 milligrams 0.4 milligrams 6 micrograms 1 gram 150 micrograms 400 milligrams 15 milligrams 2 milligrams 0.3 milligrams 10 milligrams "If protein efficiency ratio of protein is equal to or better than that of casein, U.S. RDA is 45 grams. Remember every time nutritional informatii>n is given on a package of frozen food or a can label, the numbers shown are percentages of the amounts shown in the. list. Listing actual numbers of milligrams of International Units of minerals and vitamins and other nutrients is forbidden. Only health care professionals such as doctors may obtain the specific amounts of nutrients in food products. PAGE 17 - PLAINDEALER-WEDNESDAY, OCIOB^n is, More and more frozen foods are listing the U.S. RDA per centages on their packages. Versatile products such as frozen chopped spinach provide three servings per nine- or ten-ounce package. One serving of frozen spinach, when cooked ac cording to package directions, provides 160% of the U.S. RDA for vitamin A and 4°7c of the U.S. RDA for protein. Nutrition authorities agree that essential nutrients may be overlooked, even in a varied diet. Vitamin A, for instance, is often low even when meals are chosen from the Basic Four food groups (milk, bread & cereal, meat, vegetables & fruits). Nutritional labeling provides consumers with an easy way to keep track of amounts of nutrients purchased with each food dollar. A more precise description of nutritional needs is found in the Recommended Dietary Allowances, determined by the Food and Nutrition Board of the National Academy of Sciences/in<i(it>iihI Research Council i hese Recommended Dietary Allowances show the amounts of each vitamin and mineral as well as protein required for optimum nutrition at each stage in life. First established in 1943, these Recommend ed Dietary Allowances are updated every five years. The latest revision was in 1973. Nutritional needs vary from person to person, but especially from one age to the next. The Recommended Dietary Allow ances are intended to provide for these individual needs among normal, healthy persons living in the United States under the usual environmental stress. Even though all the percents in your daily diet may add up to 100, that 100% may not be just the right amount for you.
