In this pork chop recipe, mustard is an important element in the sauce, and capers are added for extra tang. Serve this dish with potatoes and peas and a California chablis or chenin blanc. Piquant Pork Chops Degree ofdifficulty: Moderate Time: 60 minutes Ingredients: '< 8 pork chops, 1 inch thick (they will weigh about 1/2 pound each) Salt and pepper tablespoons cooking oil cup flour cup beef broth tablespoons tomato paste 6 tablespoons parsley, finely chopped tablespoons butter Servings: Four to six Cost: Inexpensive 2 1/2 1/2 2 2/3 cup onion, finely chopped 2/3 cup carrot, finely Chopped 1 cup white wine (you can use the same wine you plan to serve with the dish) 1 tablespoon Dijon style mustard 2 tablespoons capers, drained Pat the chops dry with paper towels and season them lightly with salt and pepper. Gently press the seasoning into the sides of the chops. • Put the flour into a plate or bowl and dredge the chops by coating them with flour and tapping off the excess. • Heat the oil over moderate heat in a skillet or casserole with a cover. Brown the chops in the hot oil for about 5 minutes on each side. • While the chops are browning, melt the butter in a sauce pan and saute the chopped onions and carrots until they are softened but not brown. • Add the wine, beef broth, tomato paste, 2 tablespoons of the parsley, the mustard and the capers. Mix well. • When the chops are sufficiently browned, pour off the fat from the skillet and then pour the entire mustard and caper sauce over and around the meat. Cover and simmer over low heat for 45 minutes. When ready to serve, place the chops on a warmed platter or put them, 1 or 2 to a portion, on plates. • Give the sauce a stir. If it is too thin, boil vigorously for a minute or two to reduce it. Spoon some sauce on each chop and garnish with the remaining parsley. Serve immediately. When she died in 1938, her owner, Morris Frank, received 3,400 letters and telegrams from all over the world. Why so much fuss over the death of bne dog? Because Buddy was no ordinary dog, that's why. Buddy was the first Seeing-Eye Dog in America. She belonged to Morris Frank, a blind insurance agent who lived in Nashville, Tennessee. When he lost his sight, some of Morris* friends advised him to get a blind pension. But Mor­ ris wanted to make his own way. So WHft'tWMatf tWtf Germans were training dogs to guide the blind, he resolved to get one. He sailed for Europe in April of 1928, and spent several weeks at Mt. Pelerin in Switzerland, where he and Buddy were trained to work together. Back home in Nashville, he thought his problems were solved. But they had just started. There were public ordi­ nances against dogs on elevators. Or on streetcars. Or in restaurants. Or on trains. Yet these were the vehicles and public places that Morris must use if he kept working. So almost single-handedly, he set out to change public opinion. He and Buddy traveled all over the United States, giving lectures on how the blind can be rehabilitated. One by one, the barriers fell and the laws were changed. I guess one reason I like the story of Morris Frank is because all of us are blind. Not literally so. But handicapped in one way or another. And a fellow can handle his "blind­ ness" in two ways. He can sit down and shed buckets of tears in self-pity. Or he can get up and look for himself a dog. R. J.
