Here's a recipe from the United Fresh Fruit and Vegetable Association for Hot Yam Salad. Cooked yams are sliced, and simmered in a tangy bacon dressing and combined with other ingredients. It's delicious-tasting in a meal where hot or cold turkey or chicken is a main course. North Carolina Hot Yam Salad 5 cups sliced cooked 1/2 teaspoon salt yams (4 large yams) 1/8 teaspoon pepper 3 slices bacon 3 tablespoons prepared 3/4 cup chopped fresh mustard onion 2 cups chopped peeled 1 tablespoon flour fresh tomatoes 1/2 cup water 1/3 cup chopped fresh 1/4 cup vinegar parsley 1 teaspoon sugar To Prepare Yams: Bake yams in a 350°F. oven for 40 minutes or cook in boil­ ing water to cover for 20 minutes. Cool. Peel and cut into 1/4-inch slices. To Prepare Salad: Cook bacon in a large skillet until light brown. Remove, drain and crumble. Add onion to skillet and cook until tender. Blend in flour. Cook, stirring constantly, until thickened. Stir in water, vinegar, sugar, salt, pepper and mustard. Add yams, tomatoes and parsley; mix well. Heat for 5 minutes. Sprinkle with bacon. MAKES: 6 servings. She Service. They are Theresa E. Gordon, 18, Ann Rayburn, 18, and Rhonda L. Roberts, 18, all of Champion County, and Carla J. Mathews, 17, of Douglas County. Miss Gordon is state win­ ner in the 4-H food pre­ servation program and re­ ceived an expense-paid trip to the 56th National 4-H Con­ gress in Chicago, Nov. 27-Dec. 1, as a guest of Kerr Glass Manufacturing Corp. A nine-year 4-H'er, Miss Gordon won three ribbons for her vegetables the first year. With too many products to eat and give away, she began canning, then selling them. Her profits helped fi­ nance a trip to Spain this summer and her college edu­ cation this year. Miss Gordon is a business and home eco­ nomics major at the Univer­ sity of Illinois. She is the daughter of Mr. and Mrs. Harry Gordon of Penfield. Miss Rayburn, who is plan­ ning a teaching career, is state w i n n e r i n t h e 4 - H achievement program. She won a Congress trip as the guest of Ford Motor Com­ pany Fund. "Each success makes me want to expand my horizons and try more and harder proj­ ects," Miss Rayburn says. She has completed 75 4rH projects and has held every 4-H Club office at least once. She is the daughter of Mr. and Mrs. Richard Raybum of received a $50 U.S. Savings Bond and a Congress trip donated by Union Oil Com­ pany of California. A University of Illinois student, Miss Roberts attrib­ utes part of her success to her parents, Mr. and Mrs. Gerald Roberts of Penfield, who prodded a "c h.u b by 9-year-old" into joining 4-H. Her accomplishments include spreading the 4-H story at the local shopping mall, PTA and community meetings, in ad­ dition to writing a newspaper column and participating in radio interviews. Miss Roberts is planning a career in business manage­ ment or public relations. Miss Matthews won an ex­ pense-paid trip to Chicago courtesy of Montgomery Ward &. Co. as state winner ih the 4-H consumer education program. The Villa Grove girl says "the best five years of my life" have been spent in 4-H. Among her accomplishments are developing techniques for home seamstresses, research­ ing the American soybean market, and teaching younger people their rights and re­ sponsibilities as consumers^ Miss Matthews plans to become an English teacher.
