South American adoptions fe a relatively new type of loption in the Chicago area, le Blakes and a few other families are forming a small group for Colombian Adoptive Parents to give information and help to other couples in­ terested in foreign adoption. Adoptions from South America are handled directly with the orphanages in Bogota and prospective parents must travel to Colombia to pick up their child. While waiting lists are relatively short and Colombian adoptions seem simple, these are independent adoptions. This means that the couples are entirely respon­ sible for organizing all paperwork for the courts in Bogota, meeting all requirements for the State of Illinois and for meeting all U.S. Immigration requirements for the child. Anyone interested in adop­ ting a child from South America can get further in­ formation by contacting Mr. or Mrs. Steven Blake, McHenry. What should you do with leftover Christmas turkey? The answer is "plenty" says Judy Troftgruben, University of Illinois Extension food and nutrition specialist. If you follow a few easy steps, leftover turkey can be as tasty as the first slices. It can be refrigerated and used within a few days, or frozen and prepared weeks later. Frozen turkey makes dozens of tasty dishes such as casseroles, turkey brunswick stew or turkey salad. Experiment, says Troftgruben. Almost all recipes that call for cooked chicken are just as good with turkey. After the holiday meal, make sure you refrigerate the turkey immediately. Remove the turkey meat from the bontf and wrap it tightly to prevent drying out and loss of flavor. Separate the turkey meat, stuffing and gravy. Store them in the refrigerator in different containers. If you have a large quantity of a leftover dish, put it in several small, thoroughly- cleaned containers, rather than one large one. But when the mept is covered with gravy, it maintains its quality up to six months. Troftgruben notes that dishes such as homemade pot pies are an economical and nutritious "convenience food" that you can pull from the freezer and heat when you need dinner in a hurry. In addition to casseroles, there are other ways to use turkey. Turkey broth makes an excellent base for soups and stews and adds flavor to white sauces in main dishes, con­ cludes Troftgruben. American Legion Auxiliary News UNIT NO. 491 By Pearl Cooper On Dec. 15, 1937, the American Region auxiliary, Department of Illinois, opened a small non-profit shop in Chicago's Loop area, known as Veteran's Craft exchange. This was managed by a disabled veteran, assisted by volunteer auxiliary members. Its purpose was to aid disabled veterans in' disposing of the handicraft > made by themselves or their dependents. The Craft shop opened with ninety exhibitors. Today they number over 300 from thirty-six states. This has necessitated moving to a larger, more at­ tractive quarters. Among the most popular of the items are the rugs woven by blind veterans. The materials used for the rugs are prepared by local auxiliary members. Members of the Mchenry unit have helped by supplying many, many pounds of such materials. Donations of clean usable materials, such as panty hose, nylon stockings, etc., would be appreciated by the McHenry unit for this program. Mrs. Raymond (Betty Lou) Smith, 1511 N. Park street, McHenry, serves as Veteran's Craft chairman, and may be con­ tacted for further information. This unit has also contributed to the maintenance of the shop, which depends almost entirely on such donations. Articles made by the disabled veterans are on display daily at the McHenry American Legion post home, Ringwood road, and are for sale to anyone desiring to help the hospitalized veterans and their dependents. Application forms and full details are available to any disabled veteran wishing to become any exhibitor and may be secured through Mrs. Smith. Has To Have Her Way Q. How does one go about loving a dominating, controlling woman? I don't think it's good for her to have her way all the time, but she sure is nasty if anyone goes against her. She is a problem to me (I'm a married woman) and I need some advice. A. The best way to deal with a dominating type of person is to make an objective and dispassionate study of why he or she is that way. There is some basic irritant or unhappiness that drives this woman to always want her own way. Maybe she was dominated by her mother. If you are going to love such a person the love must be based on an understanding that doesn't take offense at her belligerent actions. But love also means you must stand up to ho* with a mixture of kindness and firmness, as you would to a child.
