Buy only the amount of food you can use easily. The large, economy package is no bargain if the food becomes stale or spoiled before you can eat all of it. Large packages of loose, frozen vegetables may be a good choice because you can use just what you'll need for one meal, keeping the rest frozen Prepare your own "meals in a freezer" by cooking enough food for four and freezing the extra portions to use on days when you are in a hurry or do not feel like cooking. Cook a meal in a skillet or pot, in the oven, or in the broiler. These are quick and easy ways to cook, and meals aren't as apt to be monotonous when a variety of cooking methods are used If a dry mix makes six ser vings and you want just two, prepare only one third of the package, To divide a mix, stir the mix and measure it, then divide it into equal portions. Don't forget to reduce the ingredients you add to the mix proportionately. And finally, mark the package to show how many servings are left. Breads, crackers, and cookies ecome stale easily. Buy small amounts if possible. Wrap and freeze part of a loaf of bread to keep it fresh until needed Try a new food or recipe. Or, use a different spice, herb, or garnish with a familiar one. Add beef or chicken bouillon to meat dishes or sauces to im prove the flavor. Use shortcuts, Ms. Heberer concludes. For example, use part of a can of soup as a sauce. The remainder can be served as soup the next day. A number of members were recognized by newly appointed President Henry Rahn and given the floor to speak regarding their views and a written vote was taken. Ap proval designated that the V.F.W. hall will be the new home of the McHenry Senior Citizens club, starting with the Feb. 27 meeting. A resolution was presented and read but not discussed: "A resolution to increase the dues retroactive to Jan. 1,1978". The discussion on this resolution will take place at the Feb. 27 meeting, and will then be voted on later. The dues have not been in creased since the club began, and now with the increased cost of everything, including rent, added income will be essential to meet the club's operating expenses. The 138 in attendance had united in reciting the pledge of allegiance to the flag. A moment of silence was then observed in memory of a deceased member Frank Fleet. As it was President Rahn's first meeting after installation, he acknowledged all the members for coming out, and asked their indulgence until he becomes more familiar with his office, and anticipates their cooperation, which he will appreciate. He then introduced the entire corps of officers and chairpersons for 1978, who recieved a hearty round of applause. The minutes of the previous meeting were read and ap proved, and the treasurer's report was read, approved and filed for audit. Although the weather was cold and there was plenty of snow everywhere, President Rahn felt it would make everyone aware good weather is getting closer when he an nounced the annual club picnic, scheduled for Saturday, July 15, at the Johnsburg com munity grounds. The reser vations have been made. In the absence of John Doerr, tour chairman, Mrs. Louise Giel reminded members she is taking reservations for the Shrine circus Thursday, March 16, the bus to leave McHenry at 5:30 p.m. Mrs. Ruth Fradell, loop bus chairlady, is taking reser vations for the March 8 loop bus. Charlotte Wons, membership chairlady reported two new members, Mrs. Flynn and Mrs. Erickson, who recieved a warm welcome from the mem bership. Jim > Zednik, bowling chairman, reminded the bowiers to make reservations for the bowling banquet to be held Thursday, April 27 at the John Evans inn at Crystal Lake. He has a good orchestra for dancing after the dinner. Mrs. Bertha Quinn, program co-chairlady, advised that the Feb. 27 program will be a sing- along, and the March 13 program will be given by a representative from the Mental Health clinic entitled "Developing a Self-Image". Happy Birthday and Happy Anniversary were sung to members celebrating these events at this time. The social committee served refreshments in a Valentine theme following the close of the meeting. The next meeting will be Monday, Feb. 27 at 7:30 p.m. at the V.F.W. hall. Homemakers Annual Meeting Program Delves Into E.S.P. Jan Jones, who is in charge of the McHenry county Homemakers Extension association annual meeting in April, reported to members at the Feb. 13 monthly meeting on the entertainment which will be on extra sensory perception. The table decorations, food, and seating were discussed. The meeting will be held at Pals restaurant in Woodstock. Helen Heider, first vice- president, reported on projects that will be given in the future such as body sweater demonstration by Needles & Pins March 14, canning and freezing lessons to be given in March and macrame-advanced in April. More specific dates will be announced later. Public Information Chair man Rose Weskerna reported on the letter from District Public Information Chairman Nancy Gillfillan inviting McHenry county to bring the history book to be on display at Wardall hall during the I.H.E.F. annual conference March 21 through March 23. International Chairman Carolyn Steck reported on the Kisivaker disease in children of Africa and will be sending out more information to units about this project to help them through nutritional programs. Mary Kynel reported on the Harvesting Our Heritage committee meeting which was held last month. Another meeting is scheduled April 10. Nancy Moore, Extension adviser, home economics, reported on the progress of the relocation committee and what plans are being put into operation. President Connie Steffen named Jan Jones, Mary Kynell and Rose Weskerna as delegates to the Illinois H O t n e m a k a r E x t e n s i o n Federation annual conference" March 21 to 23 at University of Illinois. Mrs. Louise Dom spoke on the 4-H judges luncheon which will be served in July by Union and Riley units. She will be sending out letters to the various units involved. Plans are being discussed for a Homemaker week in 1979 planned by the membership chairman and public in formation chairman. Meeting with various committees will be organized in early spring. The kitchen com mittee who did the serving consisted of Claire Miller, chairman, and June Mueller, Val Arseneau, Italia Mazzoni and Leona Estis along with volunteers Kay Del Genio, Jo Rizzo, Helen Koblitz, Leone Lawrence and Lillian Bolger. The officers of the guild, the various chairmen and co- chairmen and their committees felt most rewarded by this most wonderful turnout. ... Everyone has heard of the well-laden table. The buffet table was loaded with the most delicious food prepared and donated by the ladies of St. Patrick's. These ladies should really enter their favorite recipes in those bake-cook contests sponsored by certain companies for they would all be prize winners. Grace O'Brien deserves a gold medal for she baked more than thirty dozen homemade biscuits, which makes more than 360 in any figuring. - The handmade quilt designed by Liz Norbet in a pretty pink and white bow motif and quilted by St. Patrick's Ladies' guild quilting bees, was taken home by Vickey Bottari. A Poloroid camera is in the possession of Vera Clerocke, while Chuck Nelson and Lil Michels are owners of kit- chenware. Other winners were Ed Piatt, Petey Oakford and Sister Corinne. Table prizes were Snoopy pencil holders containing pencils, a pen and a double pencil sharpener.
