* INFLATION-FIGHTING * FOOD ̂ IDEAS RICE-LOW-COST BASIS FOR TASTY MEALS TECHNOLOGY ON THE MOVE The Well-Dressed Astronaut Of The '80s GLAZED CHICKEN AND VEGETABLES WITH RICE is nutritious as well as tasty and economical.- Rice and chicken combine beautifully in many delicious and economical ways. Versatile rice can form the basis for most any meal, but its mild taste makes it a particularly appropriate accom paniment for subtle-tasting chicken--and at only about three cents per half-cup serving, a very inexpensive one, too. Not only is it low in cost; it has many positive features as well. Consider these facts: • It contains all eight essential amino acids in proper proportion to allow the body to effectively use the protein in rice. • Calcium and iron in rice help meet your body's need for these essential minerals. * • Rice contains only a trace of fat, is low in cholesterol and sodium. • Rice can be digested in only an hour while other foods require up to four. Try rice with this medley of vegetables for a delicious one-dish meal: GLAZED CHICKEN AND VEGETABLES WITH RICE 2-1/2 to 3 pounds choice chicken pieces Salt and pepper 2 tablespoons butter or margarine 1 large onion, cut in 8 wedges 2 ribs of celery, cut in 1-inch pieces 3 carrots, cut in 2-inch pieces 1/2 large green pepper, cut in 1-inch squares 1 can (14-1/2 to 16 ounces) tomatoes (about 2 cups) 1 clove garlic, crushed 1/2 teaspoon thyme 2 teaspoons salt Dash of cayenne pepper * ,1 bay leaf 1-1/2 tablespoons cornstarch 3 cups hot cooked rice Season chicken with salt and pepper. Brown on all sides with butter. Add onion, celery, carrots, green pepper, tomatoes and seasonings. Bring to a boil, cover, and simmer for 30 to 40 minutes or until chicken is tender. Blend a little water into the cornstarch. Stir into chicken-vegetable mixture. Cook about 2 minutes longer. Remove bay leaf. Serve over beds of fluffy rice. Makes H servings. Note: If>dish is to be held an hour or longer before serv ing, turn chicken mixture and rice into separate containers. Cover and place in a 140° to 160° oven for 1 to 3 hour*. Or prepare and refrigerate until ready to serve. Reheat. When America's new Spacc Shuttle orbiter enters service, the astronauts aboard will use an advanced space suit devel oped for the National Aero nautics and Space Admin istration. The two-piece suit consists of a flexible pants portion <and a hard upper section. A permanently attached backpack contains the suit 's life- support system; the Control unit on the chest regulates and^ monitors the system. ^ ̂ The---demonstrator space suit, below, is mounted on a simulated Space Shuttle bulk head toTllustrate how actual suits will be stowed when not in use., Both its back pack and control unit are mockups, but the suit itself can actually be pressurized. The engineer in the photo is modeling an undergarment that will cool and ventilate astronauts inside their space suits. Excess body heat is removed by water circulated through thin plastic tubing Iwoven into the garment's Uabric, and by oxygen carried /through the hose-like tubes along the legs, arms, and back. Because of its two-piece design, the new suit is easy to don. The entire process -- from pants to helmet and gloves -- takes about five m i n u t es.
