Or, how about this one? "The rolls were so good that I ate two of them and couldn't finish my steak. . . couldn't order dessert either." It's true. Bread is a satis fying, "filling" food. And, that truth is the basis of a bread-diet study done by the Institute for Nutrition Science at the University of Giessen, West Germany, where every single person on a four week diet lost weight eating eight to 12 slices of bread per day. The study was done with 40 men and women between 18 and 62 years of age, all overweight by five to 40 percent. The average weight loss was 12.75 pounds each on a 1200 to 1500 calorie intake. The weight loss wasn't of great surprise, as the calorie count was low. What was of tremendous surprise to the researchers was that dieters experienced NO hunger. Hunger is the major prob lem with most diets. Ninety percent of the people who begin a weight-loss regime fall off the diet and into a plate of fattening food before they ever reach their goal. There are two reasons. One is hunger, often accompanied by nausea, headaches, irrita bility and other symptoms caused by a sudden sharp cut in calories. The other reason is bore dom. Diet foods are limited in number, and most are neither "satisfying" nor "interesting." Bread's myriad sizes, shapes, colors, textures and flavors can do a great deal for any meal's palatability. Bread is actually low in calories. There are only 60 to 75 calories in a one-ounce slice. It takes six of those slices of bread to equal the calories in one broiled lamb chop and four to equal the calories in a 3-ounce hamburg er patty. A slice of bread has fewer calories than an apple and about the same number as an orange. All breads are made from cereal grains. They provide "complex" carbohydrate -- a slow-burning, stays-with-you fuel that satisfies hunger. Because bread contains so many of the nutrients that are needed in a balanced diet (particularly low-cost pro tein, the B-vitamins, niacin, thiamine and riboflavin, plus calcium, iron and carbohy drate), the German bread diet is planned so that 46 percent of the dieter's calories come from bread. This is in line with the U.S. Senate Select Committee on Nutrition and Human Needs Report which says that Americans should increase complex carbohydrate con sumption to nearly double what we are now eating. According to Betty Peter- kin of the U.S.D.A., who interpreted the Report, that means the equivalent of eight slices of bread per day in complex carbohydrate for women and 12 to 13 slices for most men. To lose weight safely and sanely, and to keep the lost pounds off, eat a well-bal- anced diet, using bread to satisfy your appetite while cutting down on foods that are high in fat or sugar.
