And it's simple to surprise everybody with extra-good choc olate ice cream, the hands-down favorite, made from pure, fresh ingredients--in your refrigerator freezer. Just follow the easy directions below. Add chopped nuts or fruit at the "mush" stage, if you wish--ladle into dishes, scoop out cones, or create an elegant parfait. It's practically foolproof, when you start with a base of unsweetened cocoa--chocolate in very concentrated form so ice cream, and lots of other recipes too, will be deeper, more intensely "chocolate" in flavor. And since you don't have to melt cocoa--it's ready to use right from the can-you shortcut preparation time, eliminate the messy pre-melting step. That's a big plus, particularly in the good ole summertime! (To use an electric or crank-type freezer, simply follow the manufacturer's instructions.) SUPER-RICH HOMEMADE CHOCOLATE ICE CREAM r (About 1V4 quarts) 4 cup Cocoa I tablespoon vanilla 44 cup sugar 2 cups heavy cream 1 cup milk % cup sugar 3 egg yolks, slightly beaten Combine cocoa and % cup sugar in small saucepan. Gradually blend in milk and egg yolks. Cook, stirring constantly, until mixture just approaches boiling. Do not boil. Remove from heat; cool. Stir in vanilla. Pour into refrigerator tray or 9-inch square pan. Freeze until "mushy," about 1 hour. Whip cream in large mixer bowl; add % cup sugar and beat until stiff. Spoon chocolate mixture into small chilled mixer bowl; beat until smooth. Fold into whipped cream. Place bowl in freezer or pour into square pan. Freeze several hours until firm. Africa is the second largest continent but has only ten percent of the world's population. The first program that the McHenry County Depart ment of Health became involved in when moving into Environmental Health activities was the Food Service Sanitation program. This program continues to be the top priority program in the Environmental Health division of the department. The department has over 750 food establishments licensed in the county of McHenry, all of which department personnel are required by ordinance to inspect a minimum of twice a year. In the latest fiscal year for which figures are complete, 2,418 inspections were made of these food establishments. The purpose of this program is to provide McHenry county citizens and persons passing through the county stopping to eat at the restaurants or purchase food within the county, with a safe food supply and reasonable assurance that they can eat the food in these restaurants without having to be concerned about the sanitary conditions under which it was prepared. The inspections are made and the manager or person in charge of the establish ment is issued an iimpection report which lists au of the areas in which the establish ment does not comply with the ordinance. It gives the establishment a specified amount of time to be brought into compliance. Any time the owner or operator disagrees with the findings of the person making the inspection, he has the right to request an informal review by the public health administrator. If the operator or owner is not satisfied with the decision of the public health administrator following such informal review, he can appeal the administrator's decision i to a Hearing committee of the Board of Health. If compliance is not obtained within a reasonable time the operator can have his permit to operate the establishment suspended and-or in the case of a flagrant violation, be taken to court and the establish ment closed. If necessary to be out in the sun, wear sun glasses and use sun tan lotion to protect the skin from sunburn if at all possible. If you do get a sunburn, apply burn oint ment or cold cream to relieve pain in mild cases. For severe cases involving blisters or extensive burns, apply a dry dressing and get medical attention. Heat exhaustion usually is caused by hard physical effort in extreme heat. A person suffering from heat exhaustion normally has a pale face, has cold and clammy*? skin, heavy per spiration and shallow breathing. Anyone suffering from heat exhaustion should loosen the clothing and seek medical help immediately. Sun stroke, which is caused by over exposure to the sun or heat, differs from heat exhaustion in that the victim's face will be red and dry, the skin will be hot, and temperature high. Breathing may be slow and noisy and the victim may in extreme cases lose consciousness. If a person has lost con sciousness, he should be placed on his back in the shade with his head slightly raised, clothing should be loosened and the person should be sponged with alcohol or lukewarm water while awaiting medical help. Unless abso lu te ly necessary, during the ex treme heat, all persons should remain inside in an air conditioned building or in the shade where a breeze can be felt. All hard physical effort should be avoided in this extreme heat, and large quantities of water should be taken to make up for body fluids lost through per spiration. Individuals with heart conditions or resp i ra tory condi t ions should be especially careful to avoid physical effort and to remain cool.
