He's cast in "Celebrity," based on the best-selling novel by the late Texas journalist Tommy Thompson. Holbrook plays a district attorney investigating a murder involving three prominent Texans. Already cast are Joseph Bottoms, Michael Beck and Ben Masters. GRANT-ED -- Lee Grant has directed an NBC-TV movie about eight female employees in a small bank, struggling to get equal pay with male employees. The film, shot in Toronto, airs this coming season, One of the lead roles belongs to Dinah Manoff, who's Miss Grant's daughter and an actress with proven cred­ its. The drama also features Jean Stapleton, formerly Archie Bunker's beloved wife, Edith. QUOTE -- Deborah Baffin says TV offers better roles to actresses her age than do movies: "Opportuni­ ties are far better in TV for me -- and other young actresses. I'm not saying all TV movies are terrific. I've done my share of fluff, including 'Hell and Highwater' and 'Honeymoon Hotel.' But I have also done exciting things like 'Haywire' and 'Willa.'
