Sparerlb Crown 2 lbs. dried prunes. . 2 small strips pork spa ribs 4 large cooking apf pared, diced 3 large celery stalks, diced 4 small onions, diced 2 lemons, grated juiced Vi c butter, melted \ X/Pc packed cracker meal 1 T prepared mustard ;V 1 t salt 1 T bottled sauce for gravy 1 16 oz. jar spiced whole crab apples for garnish watercress for garnish Prepare prunes the day be fore use or early morning for an evening meal. Cook prunes as label directs; cool, then pit and snip coarsely. Chill. Preparation time about 3Vi hours. In foil-lined shallow roasting pan, stand spareribs upright and shape into hollow crown; fasten with string. taj> large bowl, combine prunes, apples, celery, onions, lemon peel and juice, butter, cracker, meal, mustard and salt. | Preheat oven to 350 de grees. Pack ribs with prune mixture, mounding top. Cover with foil; roast 2 hours. Re move foil, then combine sauce: for gravy and 2 tablespoons water; use to brush on sides of crown. Roast 1 hour more.
