Add chopped celery and pickle if desired. Shape a creamy potato sal­ ad in a pastry pan. Unmold and cover the top with finely chopped parsley and sliced hard-cooked eggs. Cooked green beans, bits of onion and crisp bacon dices make a tasty salad. Serve on leaf lettuce with old-fashioned boiled dressing. For fruit salads, garnish with cottage cheese into which has been folded whipped cream and a dash of grated lemon rind and ginger. Use shells for serving fish salads Give them a kabob gar­ nish with an olive and shrimp or a lobster chunk with plum to­ mato Cubes of roast pork with a pineapple Waldorf salad -- celery, nuts and mayonnaise. This ar­ ticle is "Coping - Elderly Parents.") In the not too distant past, care of elderly people required no decision: the parents were cared for by the chJdren in the family. There were many reasons why this was so. First, parents and married children usually lived in the same town, often in the same house. Also, life expectency was shorter and the problems of senility did not exist with as much frequency . In addition, there was a strong social custom of taking care of the extended'family. Last, there was no alternative; there were no nursing homes or "retirement villages" available. Today, however, care of the elderly, sick, or senile parents pose problems which many concerned adults must face. Often one must make the im­ possible decision of trying to do what is best for the parents as well as the immediate family, for this is a decision which affects many lives. Obviously, the decision must be made carefully, for to reverse the decision, particularly if the decision is to have the parent in the home, can be devastating. If there is a good relationship between the parent and the rest of the family (including grandchildren) and each person feels comfortable with the closeness of living together and the elderly parent is unable to live alone, then having the parent in the home is by far the best solution. This decision must be based on complete acceptance by all persons and not out of a feeling of guilt. The decision to have an elderly parent placed in a nursing home is never an easy decision, but is sometimes necessary, especially when medical or custodial care is required. Everyone in the family should participate in the decision-including the elderly parent. Realism, not emotions and concern and not guilt are the ruling factors in making this very difficult decision. Frequent visits and short trips away from the nursing home can be invaluable in making the elderly parent feel loved and appreciated. Next: Temper Tantrums.
