The world suddenly grows better Perhaps, if we tried we might carry the joy of Christ mas with us throughout the year DELICIOUSLY TENDER PIECES OF STEAK, cut from the beef chuck, are featured in prize-winning Cook-Off recipe. Culinary creativity captured the first prize of SI,500 for Mrs Charlotte Granville, Sil ver Lake, New Hampshire, at the recent 1978 National Beef Cook Off in Oklahoma City. Her winning entry, "Buffet Butter Fingers in Brandied Mushroom Sauce," trans formed a less familiar, econom ical steak into a gourmet entree. This was the second try for Cook-Off prize money by Mrs. Granville who also represented New Hampshire in last year's contest. Her winning entry topped those of the finalists from 45 other states and the District of Columbia The 1978 Cook Off was the fifth national contest sponsored by the American National CowBelles, Women's Auxilliary of the National Cattlemen's Association, in cooperation with the Beef Industry Coun cil of the National Live Stock and Meat Board. The sixth Cook-Off will be held in Omaha, Nebraska, September 27-28, 1979. As in this year's contest, entries will be limited to rec ipes using two to five pounds of beef chuck, round, rump or fresh brisket that have been ranked first in state contests. Mrs. Granville's recipe calls for cutting pieces of steak from the boneless top blade of the beef chuck and quickly pan- frying them to a medium-rare before topping with the tasty mushroom sauce. The crowning touch is provided by a garnish of "daisies" fashioned from green onions. Today if you buy a candle designated as bay berry, the wax will have come from one or more species of baybemes in Puerto Rico or Cptumbia Most imports are listed under the name of myrtle wax. laurel wax or baybem A small amount is ob tained from South Africa as bayberry or capeberry wax Of ten. ordinary paraffin-wax can dles are coated or dipped several times with bayberry wax to give them the olive-green color and fragrance, or they are color, d an olive-green resembling bayberry and scented with bayberry es sence or chemicals Most manufacturers make all three and label them to tell you the type /t merry verse about the good luck the bayberry candle brought abounded during the Colonial era: "If you burn ibe bayberry can dle bright % to its end on Christmas night, tis the tale told tried and true t'would great love and health to you." Bayberry grew wild in the sandy soil along the Eastern coast from Nova Scotia to northern Florida, and candles were in abundance to provide the Colonists with a bright light and pleasing scent The pleasures of gathering baybemes for candles at Christmas is all but past, ex cept for a few individuals who have bayberry bushes on their property I think parents should al ways find out whether it suits their parents to care for the children before they make such arrangements. Certainly if the grandparents are very old they should be asked about having small visitors. And if the grandparents have no help it may be wise to hire someone during that period to help with the elderly people's house work and nursing. I love to have them visit me and spend a day or so with mc but--I am getting old and my husband is not well and he gets very tired of having his routine disturbed for a very long time. Now why I am writing is this-I do not think that the children should take for granted that anytime they wish to take a vacation or go off on a trip they can bring the children here without finding out if it suits us. If there were only one or two it would be a different matter but we have a large family with a number of grandchildren. Do you think I am being selfish to feel as I do? M.C.-Ky.
