Cut chicken in small thin pieces. Saute chicken and onions in butter about 3 minutes. Stir in celery and cook 2 minutes longer. Remove from heat; add remaining ingredients and toss l ightly to blend. Serve while hot . Garnish with tomato wedges and r ipe olives, if desired. Makes 6 servings.
