DEAR OLD DAD STEAK 1 beef top round steak, cut iy4 inches thick Vt cup sherry Vi cup soy sauce V* cup salad oil V* cup lemon juice 2 tablespoons brown sugar Vi teaspoon ginger 1 clove garlic, minced y« teaspoon hot sauce 4 teaspoons cornstarch Vi pound mushrooms, sliced V4.cu| on! Mix together sherry, soy sauce, oil. lemon juice, brown sugar, ginger, garlic and hot sauce in small saucepan. Cook slowly 10 minutes; cool. Place steak in plastic bag; add marinade and tie securely. Refrigerate 24 hours. Remote steak from mari­ nade, reserving marinade, and place on grill over ash-covered coals or on rack ifib broiling pan so surface of m&at'is 4 to 5 inches from heat. Broil at moderate tempera­ ture to rare or medium (25 to 40 minutes, depending on done- ness desired), brushing with marinade and turning occasion­ ally. Carve in thin slices, diago­ nally across the grain. For sauce: stir remaining marinade into cornstarch in saucepan. Bring to boil; add mush­ rooms and green onions and cook slowly until thickened, 2 minutes.
