Mix and match these beauties to your de­ light. A very pleasant way to serve fruit salad in holiday meals is with a creamy style dressing. This easy recipe for fruit salad will add a fes­ tive touch to your menus this holiday. A fresh fruit compote is a refreshing way to finish off a holiday meal, a light dessert to follow usually rich fare. CREAMY FRUIT SALAD Ugg 3 tbsps. sugar V« tsp. salt y« tsp. ginger 2 tsps. butter Vi cup fresh orange juice lMe tbsps. fresh lemon juice V* cup heavy cream, whipped apple wedges Fresh orange and grapefruit sections Halved, pitted grapes Fresh pineapple chunks Salad greens Beat egg in top of double boiler. Add sugar, salt, ginger, butter, orange juice and lemon juice. Mix well. Place over boiling water and cook, stirring constantly, until mixture thickens slightly, 5 to 7 minutes. Chill. Just before serving, fold in whipped cream. Arrange fresh fruit 6a,$alad greens and serve with dressing. Makes: about 1 cup dress­ ing, enough for six servings. HOLtDAY FRUIT COMPOTE 4 oranges 1 papaya 1 pineapple IVt cups halved, pitted Ribier and Emperor grapes (about % pound) 1 cup Marsala wine 1 cup water % cup sugar 1 stick cinnamon 3 whole cloves Cut 3 strips orange peel from 1 orange, using vegeta­ ble peeler and reserve. Peel oranges and cut into cross­ wise slices. Pare papaya, cut in half lengthwise and re­ move seeds. Cut into cubes. To prepare pineapple, cut off stem and crown ends. Cut off rind all around, from top to bottom. Remove eyes with pointed knife. Cut into quarters lengthwise. Cut away core. Cut. remaining meat into fingers about 2 inches long. Combine orange slices, papaya, pineapple and grapes in large bowl. Combine wine, water, sugar, cinnamon stick, clo ves and orange peel in saucepan. Stir over medium beat until sugar dissolves. Reduce heat and simmer 5 minutes. Re­ move spices and peel. Cool to lukewarm. Pour syrup over fruit in bowl Cover and refrigerate 6 hours or over­ night Makes: about two and one- half quarts or 12 servings.
