Spoiled Potatoes Good for Starch Starch in potatoes is not destroyed by the common decay-producing fungi or by freezing. It has been found in recent studies conducted by the United States Department of Ag- riculture in laboratory tests that it is' possible to recover most of the starch from frozen and rotten po- tatoes, which lead specialists of the department to suggest that an at- tempt should be made to salvage the great quantities of spoiled stock now rejected and dumped on the terminal markets.
