Comparatively few cooks have anything to do with the line birds, though I have often wished I might give a few hints to those who have, When 'i have seen the care- less, bungling manner in which they are too often dressed for market. ‘ It is far easier to select the best when they are dressed with the head and fee-Z on : the eyes will le. full and bright. and the skin and joints of the fectsoft and yielding, whereas, in poor poultry. the lattcr are always dry and still.
