Has he a fine, round, bright-eyed nwe, she will be fat about the time his half-filled pork barrels are empty and she is stripped of Ler fair skin and fair proportions simply because ehe is worth the trouble of killing; and thus many of our farmers per- peluate a breed of animald that are a disgrace to the'country. They seem uneasy while they possess an animal that will draw the attention of their neighbors or the butchers, and woe be unto it if1t pnt on a better ap- pearance than its fellows, for from that time its doom is sealed. To improve the breed of animals it is by no means nccessary to incur a great expense in bringing animals 'from a distance. If a farmer will mount his horse and ride across the country some fine day, and view the live stock of his neiglbgrs, he will soon perceive that there are abund- ant means of bettering bis circum- stances by a cross or exchange, at a slight cost, and he by this plan 1s improving his julgemnt by compar- ison, and hearding up experience for a future day that will be of more value to him than the expense of many such excursives; and improve- ments once begun and persisted in for a short time, will produce such a corresponding improvement in the mind and circumstances of the farm- er as will ensure its continuation, and richly reward all his labor and outlay. Many of our farmers, destroy the hope of improving their stock by a system of fulse economy in the selec- tion of males from which they breed their stock; many donot keep a male from which to breed their horses or horned stock, nor is it necessary, as one will do for a neighborhood; but this one should be the best; and in order to keep a good one, a good price must be charged for his servi- ces. Many farmers loose thirty and even fifty dollars in the value of a full grown horse, steer, ox or cow, by a system of false economy, by not being willing to pay two or three dollars more {dr the services of a male. I have repeatedly driven my cows three miles to a good male, at a cost of four or five dollars, when I could have found a male on a neighbor's farm at a cost of twenty five cents. To PRESERVE StRAWBERRIES.--To0 two pounds of fine large strawberries add two pounds of powdered sugar, and put them in a preserving kettle, over a slow fire, till the sugar is melt: ed; then boil them precisely twenty minutes, as fast as possible; have . ready a number of small jars, and put the fruit in boiling hot. Cork and seal the jars immediately, and keep them through the summer in a cold, dry cellar. The jars must be heated before the hot fruit is poured in, oth- erwise they will break. To Preserve RauBars.--Take pie: plant, or rhubarb, strip off the skin, cut into inch pieces, then put one pound of sugar to "five pounds of rhubarb, stew until soft, then strain out the juice by pressing through a cloth, spread the rhubarb on plates, boil or simmer down the juice quite thick, turn it over that on the plates, dry it in an oven or by the stove, put into a jar and pound it down hard, covering tight and it will keep for years; and, flivored with essence of lemon, it will make a far more deli- cious pie than when green--of course more sugar must be added when used. STRAWBERRY Jeriy.-- Express the juice from the fruit through a cloth, strain it cleas, weigh, aud stirtoitan equal proportion of the finest sugar dried and reduced toa powder: when his is'dissolved, place the prescrving pan over a very clear fire, and stir the jelly often until it boils; clear it carefully from scum, and boil it quickly from fifteen ro twenty-five minutes. This recipe is for a moder- ate quantity of preserve ; a very small portion will require much less time. Raseserry Jam. --Weigh the fruit, and add three quarters of the weight of sugar ; put the former into a pre- serving pan, boil, and break it; stir constantly, and fet it boil quickly ; when the juice has boiled an hour add the sugar and simmer half au hour.
